  • Evening, I did post on the weekly mealplan thread but I think I'll post here as well so I can keep an eye on how well I'm doing with it. So, here's my mealplan for the coming days:

    Tues 8th - Chicken Curry with Rice - Yep, had this.
    Weds 9th - Meat Feast Pasta Bake - We had HM Baguette Pizzas
    Thurs 10th - Jacket Potato with Melee Beans - Yep, lovely
    Fri 11th - HM Baguette Pizzas - Going to have enchiladas
    Sat 12th - Chicken & Bacon Lasagne with Garlic Bread
    Sun 13th - Roast Lamb with All the Trimmings
    Mon 14th - Hot Roast Lamb Baguettes with Minty Gravy OR Cold Roast Lamb Salad Wraps with Minty Mayo Dressing and Sliced Sweet Red Peppers.

    That's as far as planning has got at the moment, but it's always a work in progress - I'm always looking for new things to try and I think this thread will help to bring more ideas together.

    Hope you don't mind me tagging along for the meal plan ride. :)

    Update - a few things have been shuffled about to make sure Mr KB is happy with the menu, and now the chicken and bacon lasagne will be a creamy sauce rather than a tomatoey one. Otherwise, I'm sticking to it and feeling rather good. My mealplans are normally drawn up on a Saturday or Sunday when I've time to sit and plot, so will post when I have a new list. :)

    I'm very proud of myself today! Planned meal was lasagne. Last time I made lasagne, I had too much bolognaise so froze a portion - not enough for lasagne for two though. Last time I made cauliflower cheese, I made too much cheese sauce so froze some - not enough for lasagne though. I had the ingredients in to make from scratch today but decided to declutter the leftovers from the freezer instead. Meat was bulked out with some lentils, chopped onion (from the freezer) and passata. Cheese sauce was stretched and de-cheesed a bit by adding extra milk and flour. And miraculously despite amounts being pure guesswork, I made the exact right amount to fill the lasagne dish exactly. It filled me up more than usual so I'm definitely going to add lentils and make enough for two whole lasagnes next time!

    I have the same problem with not labelling stuff before it goes into the freezer so I've been wondering all day whether we were going to have lasagne or some bizarre concoction of beef stew and cheese sauce :rotfl:

    We often have "freezer surprise" where I've frozen stuff and the label has fallen off! They're usually only single portions so DH and I end up having different things.

    In fact we've had two dinners in the last week or so that have been freezer surprise.

    Only two or three portions of freezer surprise left in our freezer. I'm determined to have more discipline in future. Back in my old house I kept a roll of masking tape and a pencil in the kitchen drawer to label things as they were going in. Since moving in with OH, he objects to the existence of cheap masking tape and won't ever contemplate buying it so I've just been sticking stuff in the freezer thinking "i'll remember what that is" as we rarely have leftovers. But now its grown to half a dozen mystery pots for the second time I've put my foot down and bought a load of masking tape from the pound shop. OH need never know - he doesn't explore the kitchen drawers nuch anyway.

    Although I've still got a couple of freezer tubs labelled with the things that were in them prior to moving. One freezer surprise is "corned beef hash - march 2009" - pretty sure its actually pasta bake in that tub!

    Is there such thing as freezer tape here in the UK? It looks like masking tape, but the sticky is designed to hold on even in the freezer. Even the expensive masking tape we have keeps falling off due to the stupid sticky backing not working in the freezer. I've resorted to permanent markers.

    I use permanent marker.

    Stuck to the meal plan. Tonight we had homemade fishcakes (from the freezer - made double last time we had them) and cauliflower and broccoli cheese.
    I'm loving being organised, I'm even remembering to take things out of the freezer, like the sausages for toad in the hole tomorrow.


    With the weather forecast predicting snow I can see, at a glance, what I need to buy to see us through the next few days. I'm not panicking about meals. I keep a well stocked store cupboard so we will be fine. One thing I am doing which is a big help is having things like homemade pies and casseroles in the freezer. I will put aside time each month to restock.

    Grrrrrr forgot to lift the chicken out again this morning:mad::mad::mad: Thats 2 weeks in a row we havent managed to have this! Still I guess its left to go into next weeks meal plan.

    Ok, so the next meal plan takes us up to payday with minimal shopping needed. Ive allocated days, but as usual this may change:-

    F11th: Chip butties, with gravy and sweetcorn (all I could rustle up that didnt need defrosting!)
    S: Salmon stirfry (me)/hot pork sandwhiches, chips and veg DH+DS)
    S: Lunch out/ tea: picnick tea (sandwiches, HM cakes, yogurts, cheeses etc)
    M: Sweet and Sour chicken with egg fried rice
    T:Chilli & rice
    W: Chicken tagliatelle & garlic bread
    T: Beans on toast
    F: Ginger and garlic salmon and noodles (me)/egg, chips and beans (DH+DS who wont eat salmon!)
    S: Chicken in hoisin sauce, with noodles and egg fried rice
    S: Lunch out/tea: picnick tea
    M: Pay day :j
