my meal plan for this coming week
friday - sausage and leek cassoerole with herb dumplings and mash. Sausages out of the freezer.
saturday - chilli beef in slow cooker
sunday - hubby cooking but im doing the choc mousse for dessert
monday - corned beef hash with beans
tuesday - slow cooker chicken curry with rice and tandori naan
weds - parsemsan chicken with hm chips and salad
thursday - slow cooker pork chops with apple and cider sauce, with mash or roast potatoes and cabbage i think
hows everyone getting on with meal planning? are you sticking to it?I'm trying so hard to be thrifty, but it doesn't come naturally. You lot are an inspiration!JUST LOVES THE O/S BOARD0 -

Sticking to the meal plan has gone well here. Not missed a single night. Last night we had to change chicken out for pork in the pot pie. Needed the chicken for tonight instead. Still, it was wonderful and it used up the last bit of pork roast that we had.0

I think I'm going to make another change to my mealplan again tomorrow night - will ditch the pizza to next week and make the quiche that didn't happen last Sat when we went out instead. Main reason being that I should have my gas hob working tonight :j I've spent 12 months cooking in a temporary kitchen and then another 10 months still using the same temporary electric hot plate in my shiny new kitchen while OH has been doing building work and getting the house renovated. We're now ready for gas connection and the gas engineer should be coming today so I can finally have some temperature control!
I would be a shame to spend the next couple of days cooking "oven only" meals :rotfl:0 -

Will post up my whole month meal plan next. Started on feb meal plan and have decided to book my online food shop slot now ready. Giving I'm getting bigger by the day and struggling to manage toddler, trolly and bump have thought a large monthly online delivered shop is now my best bet. That way I can focus on what we actually need and get the meals cooked and frozen right at start of month. Booked under hubby's name as I could claim another £12 off first shop, then I've used collected nectar points giving a total of nearly £30 off the shop. This has managed to get 2x whole chicken, 3xpork mince, 3xbeef mince and 20 pork sausages; effectively free:j.
I usually don't buy much meat in supermarket but with the offers and money off thought it was a better idea. Plan on getting a large ham joint to boil and slice for sandwiches, throwing in pasta dishes and good old ham egg and chips. Again think it will work out cheaper as I can get a massive side for £20 and will stretch. Stock will also be used in risotto dishes then. Am also going to stock up on beef and chicken pieces, as buying in bulk saves us a lot of the retail price. I can buy catering size packs and use my 2nd freezer to store.
Anyhow enough of my late night ramblings again, will post the menu now. And thanks for keeping me going guys, really spurs you on when others are doing so well.

Fantastic!depending on uour freezer situation you can make lots of stuff in advance and freeze it. Whenever I make bolognese mix I use a kg of mince and get 3 lasagnas from it which I freeze in those pyrex dishes with plastic lids so I can cook from frozen, plus about 4 portions of bolognese to mix with pasta. Of course if you've limited freezer space freezing 2 lasagnas and various tubs of bolognese is a bit impractical

Here is my meal plan from 9th Jan.
Weds 9th Roast Pork & Veg. - From Freezer - done.:j
Thurs 10th LO Roast Pork & Veg & piece of Chestnut stuffing - Fr.
Fri 11th Pork Curry,Rice & Naan- using LO & Jar of Korma sauce + Rice from cupboard. Naan bread bought at SM.
Sat 12th Chicken Pasta Bake + Garlic Bread
Sun 13th Chicken Pasta Bake + Garlic Bread.
Mon 14th Steak & Kidney Pud from Fr.
Tues 15th Schnitzel, Potato wedges and Baked beans.
Last week we made some flans and a sausage & egg pie (now in the Fr) to be used for easy food to take to work - useful as OH often gets called into work at short notice, but does have access to a microwave. However, we STILL managed to spend £60:eek: at the SM today - a large chunk of that was on cheese I think, which we both love and OH has daily as part of cheese& biscuits snacks instead of desserts due to his diabetes.
Am really going to try and inventory what food is already in the house and will keep coming back for inspiration and support. At the moment I am off work and on antidepressants, so sometimes getting my brain to work and my backside into gear is challenging!;)Decluttering 2013 challenge. Grrrr, i have fallen off the meal planning wagon!
I will be buying a chicken tomorrow, so will be having things such as a roast (Sunday), chicken salad, chicken curry, chicken stirfry...you get the gist0 -
So ... slight disaster tonight - how on earth am I supposed to make Chicken & Broccoli Bake when I don't have any chicken

Will have savoury rice instead (have loads of packs that really need used as are at / just past their use by date)

Well the Chili and rice for tonight has turned into jackets and bolognese when I realised what I had thought was chilli wasnt..:rotfl:Must get into the habit of labelling what I put in the freezer. Still, made from stuff that we had in so thats fine. Just tomorrow to go. Now that Ive had to take off the bolognese and garlic bread Ive added on home made chinese - but that was left over from last weeks meal plan and is stuff I already have in, so if we manage that, thats a full week of eating from the freezer/storecupboard :j
F 4th: Veggie pasta (and garlic bread for DH)
S 5th: L: sandwich (Me & DH)/fishfingers, veg and chips followed by jelly & ice cream and then cake (DS - at his party)
S 5th: D[STRIKE] Home made chinese (me and DH)/ beans on toast (DS)[/STRIKE] McDonalds
S 6th: L: [STRIKE]Sunday lunch at MILs [/STRIKE]Soup and crusty rolls
S 6th:Steak casserole, mash roasties and veg
M:Baked potatoes with cheese and beans
T: Southern fried chicken in pittas with salad and chips
W: Beans on toast
T: Jackets and bolognese

Week 3
Continuing with operation make space in the freezer so it will close easily.
F 11th HM pizza, garlic baguette & salad (pepperoni/ham/chicken & mozzarella from the freezer).
S 12th Teryaki chicken, rice & prawn crackers. With mini satay sticks & mini spring rolls to start (chicken, satay & spring rolls from freezer).
S 13th Chicken, roast potatoes, cauli/broc/carrot & gravy (chicken & roast potatoes from the freezer).
M 14th Chicken Arribiata pasta
(need to use up some cooked chicken chunks bought for sandwiches with a use by date of today)
T 15th Chilli & rice (HM chilli 'ready-meal' from the freezer).
W 16th Chicken kiev, new potatoes & salad
T 17th Paprika pork & tagliatelli
Not going to beat myself up if these meals don't happen on these days, but do get used this week, or if are swopped for other cupboard/freezer stores with no additional spend. :A
