Just re-vamped my meal plans and merged some of last weeks with some of this weeks. So here goes....
Mon - bean/spaghetti on toast
Tue - sausage casserole and mash
Wed - smoked haddock poached in milk with crusty bread
Thurs - omelettes
Fri - chicken pie
Sat - lentil soup and crusty bread
Sun - shepherd pie.
Some of the meals are complete comfort food as I am still not feeling 100% and will suit the beginning of the week. Most of the stuff we have in from last weeks shop and what was in the freezer. Sounds like everyone is doing well!GC = £150.58/£2500 -

Mon - chicken & leek risotto
Tues - chicken & leek risotto
Weds - salmon & new pots
Thurs - turkey steaks in breadcrumbs & new pots
Fri - chicken casserole & swede, carrot & pot mash (both from freezer) or toad in the hole TBC
So ... that was a bit of a funny period to try to cover:o - have decided I will work Mon - Sun
2 reasons - my weekly planner works this way:cool: and I tend to do my SM shop on a Sun so can get anything needed for the next week then:)
Also decided that I've loads of recipes (good at cutting them out of mags;)) / cookbooks that I never useso going to try to incorporate one new meal / week
- lets see how that goes!
So ... based on this, revised meal plan of:
Mon - chicken & leek risotto (will make stock & soup from carcass tomorrow)
Tues - LO chicken & leek risotto
Weds - chicken & broccoli bake (new recipe!)
Thurs - turkey steaks in breadcrumbs & veg & new pots
Fri - toad in the hole & some veg *
Sat - salmon & veg & new pots
Sun - chicken stuffed with soft cheese & wrapped in bacon & veg & new pots
* think I may just do a one portion one as it didn't reheat that well(they are WW sausages so not all meat) - does anyone know how to reheat this so it doesn't dry out?

Rising- i tend to put in the oven for 10mins, and then pop under a low grill to crisp up again (about 5-10mins), as i find if i only oven them, they go soggy?
I am going to be having a very 'Chicken Heavy' week Next week, as its a skint week and i will be doing the infamous 'Rubber Chicken' yum yum yum..i LOVE it!!0 -
I messed up. Spent all last night putting together furniture and didn't go to bed til gone midnight and completely forgot to take the duck out of the freezer, so we had meatballs this evening, which was more of a success than last time (DD1 actually ate hers!) due to making tiny meatballs an inch across instead of twice that. Downside: took me bloody ages to make them! anyway, the duck will come out tomorrow to eat on Tuesday - we've to wait in for the delivery of a new heated towel rail so no issues doing a roast dinner for the evening, plus Tuesday is our cooking day, so we have chocolate chips to make chocolate brownie biscuits (affectionately known as splat biscuits
)
Tomorrow is my grocery shop, aiming to spend less than £25, but that may not happen as I do need to get some chicken... meat from the supermarket instead of from the butcher always makes me cringe!Rule 7: If you're not changing it, you're choosing it.

I'm not doing too bad this week, have managed to eat from my list. It's not a 'weekly plan' more of an ideas list. I always find if I plan, I want something else.
So, this year, it's no plan, just a list from which I will take inspiration!!
I'm off work for the next two weeks, so hope that I can really get into the swing of things.
My original idea for Jan was also to only use cash for food shopping, keep all recipts and see just exactly how much I spend. Well, that's out the window!! I have decided to add a selection of new dishes to the list - but that means I needed to buy lots of additional 'stuff' that was not already in the cupboard.
The cash flow 'audit' will now begin in Feb.Scrappie
