In my slow cooker today...

    Yesterday was 5 litres of chicken curry made with free chicken (i get this from my friend whos father in law and husband own a chicken processing factory.....she gives me a 5kg box of fillets for picking up her daughter from school and keeping her for a couple of hours maybe once or twice a week (the child is no trouble, a pleasure to look after!! she keeps my DD company) so i used 3 fillets of these 2 jars of Mr A sp curry sauce, some curry powder, onions, carrots, courgettes, 3 tins of tomatoes sp of course and peppers, also threw in some cumin powder, ate half and froze half....it was beautiful the kids loved it!!
    Then i made another 5 ltrs of bolognese sauce using 500g of mince lentils and oats grated carrots, chopped onions tins of tomatoes, beef stock, celery (chopped very finely) copious amounts of garlic and herbs out of the cupboard froze half, and then made the other half into chilli using a tin of chilli beans from Mr A and some chilli flakes and a bit of bourneville choclate, its now frozen and will be taken out when i eventually make a meal plan!!!!:)

    My slow cooker usually has a big batch of chilli every month which goes in the freezer for quick after work meals - bolognaise is lovely in it, I do the shepherds pie bottom too so that I only have to scoop some out and plonk mash on top and bake a little before tea ;)

    However today, it is turkey meatball casserole (good food book recipe). Basically chopped carrots, chopped onion, garlic, chopped potato, water, passata, paprika and then meatballs on top.

    Tomorrow it will be a Gammon joint and water - never boils over, doesn't need watching - and the meat falls apart when cooked ;) all I'll need to think about is veg :)

    Even though I'm not at work at weekends, I love having dinner nearly ready before we've even eaten lunch so I can sit on my butt for the afternoon - erm I mean get on with other jobs - obviously ;)


    3.5 litre one does me OH and 2 stepkids 10 and 13) so would be plenty big enough for two of you ;)

    Stuffed peppers are good in it - and I keep meaning to try baked apples....

    Newlywed, can you advise ref the stuffed peppers - do you just put them in the slow cooker, or do they need to be wrapped in foil, or with some water added?

    Edit -just done a Google search and found loads of recipes - some say add extra liquid, others just plonk the peppers straight in. No mention of foil. There's only one way to find out! Must go and buy some peppers - there seems no end to what a slow cooker can do. I reckon I might try roasted veg - I'll brush with olive oil, wrap in foil, and bung them in, maybe next to the roast peppers. Now, if only a slow cooker could do housework as well as cooking...

  • Hi Guys

    After some advice from you Yoda wise slow cookers ;)

    Want to do beef in beer/ale on tuesday. Need to get the thing cooking before work, so time is of the essence (hair to wash.. the usual :o ). Can i just pour the beer/ ale in, in the morning? or do I need to boil it first to get some of the alcohol out??

    I want to get as much ready the night before - so thought if I peel & chop my carrotts, celery - if I keep these in cold water - will that keep them fresh?? And I chop my onion and cover in clingfilm in a bowl in fridge.. am I on the right track??

    I am going to pop home at lunchtime and check on it.

    Look forward to advice!

    Yes, I think you're on the right track, Little Emms, as far as I know there's no need to boil the beer/ale first, just pour it in. Cooking takes out the alcohol content anyway, just leaving the taste. I wouldn't put the veg in water, just pop them in airtight containers and then into the fridge.

    I didn't think I had to cook the beer first, but I've read such conflicting recipes!

    I will also do as you suggested with the veg, just need to get as much ready the night before!;)

    Although I don't want to rush going to work next week, I'm looking forward to Tuesday already :drool:

    Big load of bolognaise today, 2 packs of mince, 1 jar of tomato and herb pasta sauce, 1 box of veg (sweetcorn, peas, grated carrot and tiny bits of broccoli), jar chopped tomatoes, small tin conc tom puree and a splash of worcs sauce :)

    will feed 4 hungry kids (got rellies staying) this evening and left overs in freezer for fast meals in the week :)
