Prawn curry today.
Vegetable Moussaka
1 aubergines
4 potatoes
2 onions
3 large tomatoes, skinned and sliced (I am using a tin of chopped tomatoes)
salt and pepper
Cheese sauce, add mixed spice (home made leaving a little cheese for the top.
Heat the oven to 160 c (325 F)gGass mark 3
Fry the sliced aubergine and potatoes a little.
Make the cheese sauce, adding the mixed spice
Put 1/2 the mixed vegetables into a oven proof dish, dollop half the sauce over then add the rest of the mixed vegetables ending with the potatoes on top. pour on the rest of the cheese sause. Cover and bake in the oven for 1 1/4 hours. Take the lid off, add the rest of the grated cheese and put back in the oven for last 15 minutes.
This is a realy filling meal, so make sure you dont have to do anything but collapse on the sofa afterwards:rotfl:If winter comes, can spring be far behind?

Yes, i just put mine in, rub butter over the breast and add a small amount of water - about a mugful. (sometimes i add spices or herbs too)
It won`t be browned this way but i`m not fussed about that, some people brown the chook first in a frying pan though, i always cook mine on the lowest setting overnight or all day when i`m out.
