I did a Chicken and Mushroom Casserole in mine on Thursday - browned two chicken legs all over, put them in SC, then chopped a couple of rashers of back bacon and cooked them off, adding chopped onion, clove of garlic and chopped celery to the pan once the bacon was cooked, just to soften the onion & celery. Then added lots of sliced mushrooms (remains of Mr T's value pack). The bacon/onion/mushroom combo then went into the SC, st on LOW, with enough chicken stock to cover the veggies and some salt & pepper. I actually managed to get this done before setting off for work (sooo glad I work close to home LOL).
DH and I got home around 6pm - yummy Chicken Casserole smell. I thickened the casserole with some cornflour and just before serving I added some left-over creme fraiche (greek yogurt would do just as well). We had this with creamed potato and some broccoli.
I ADORE my slow cooker - a couple of years ago when DH and I had the family over for Christmas Dinner, I "steamed" my Christmas Pudding in it - this worked really well!!!

Hi, I'm new here! I've had my slow cooker about a month and have made loads of gorgeous meals. At the moment I'm cooking chicken legs and mushrooms which I'll use to make a pie. Last night it was sausage and onion casserole (my boyf had 3 portions!) Have even made apple crumble which turned out surprisingly well. My boyfriend always complains when I buy new kitchen gadgets and more often than not they find their way into the garage or loft, but not my slow cooker. I'd be lost without it now. Has anyone else made any nice puddings in theirs?

    Hi Katy :D
I've gone a bit mad on fruit cobblers in there at the moment take a look on www.justslowcooking.com theres tons of luscious puds on there
  • Thanks triple D ! Bookmarked that one. However got to say a lot of American sites refer to 'italian seasoning' I'm assiming this is the usual suspects, oregano, basil etc can't really find much out about it.

Anyway in my SC today I have coq au vin - minus the mushrooms cos the kids are really not keen, already smells divine after an hour..!

  • Hi D, thanks for that! Have you tried the Cherry Cobbler recipe on there? It says to use a cake or muffin mix. I've got some chocolate cake mix in the cupboard that I bought as it was reduced to about 10p but never used it. I wonder if it would create a kind of 'black forest cobbler'? Could be a disaster but I'll have a go

You can buy Italian Seasoning in the supermarket - I think it's a Schwartz product.

It's basically mixed herbs. I don't recommend you buy Italian Seasoning as its quite expensive, just have a sneaky look at the ingredients list next time you're in Tesco!

enjoy life, we only get one chance at it:)
  • So worryingly excited !
Am just about to put brisket in SC. Been trawling through the SC Recipe thread and it seems simple is best, so a few leeks, stock cube, water and a splash of red, salt and pepper.
