Balinese - style chicken
900g chicken thighs bone (or you could just use chicken breasts)
2 tsp salt
1tsp freshly ground black pepper
2 tbsp plain flour
3 tbsp groundnut oil
225g onions coarsely chopped
5 garlic cloves crushed
1tbsp finely chopped fresh root ginger
3 fresh red or green chillies seeded and chopped
2 tsp sugar
1 tbsp lemon juice
2 tbsp orange juice
1 tbsp dark soy sauce
400ml coconut milk
Blot the chicken dry with kitchen paper and sprinkle evenly with salt and pepper. Sprinkle with the flour shaking off any excess.
Heat a wok or large frying pan with the oil and brown the chicken on both sides. Remove and drain on kitchen paper.
Drain off all but 1 tbsp of the oil and add the onions, garlic, chilli and ginger and stir-fry for 3 minutes. Then add the sugar, lemon juice, orange juice, soy sauce and coconut milk. Return the chicken to the pan, cover and cook on as low a heat as possible for 20 minutes or until the chicken is cooked through.
I serve this with basmati rice and brocolli.
You could add less chillies if you want. I just used one tonight and it was still really tasty, also I used chopped up chicken breast instead of thighs as that's all I had in.
Hope you like it!It's not how far you fall - it's how high you bounce back.... :jHappiness is not a destination - it's a journey0 -

Nothing to report here really, no spends at all - not even a chocolate bar.
It snowed Sunday night but we had less than an inch settled here - where I work, just 9 miles away there was about 4 inches! I still managed to go for a run today though.
Pole class tonight was good fun. We all wore something red and had photos taken in various poses with a red heart-shaped helium balloon.
Picked dd up from after school club tonight and she had swapped shoes with another girl, who unfortunately had already been picked up before they swapped shoes back, Grrr...I was so cross, not least because dd's shoes are in far nicer condition. She'll get hers back tomorrow (I hope) but I just thought it was a really pointless thing to do.
I didn't do pancakes tonight as I had pole class to go to - dd had some at mum and dad's but I will do some for us tomorrow night. It's not how far you fall - it's how high you bounce back.... :jHappiness is not a destination - it's a journey0 -
Our boiler is on the blink! Woke up this morning and it just hadn't come on so no hot water or central heating
. I know what's happenened - pressure has got too low and i haven'tbeen able to repressurise the system (nothing happens when I turn the tap). I should have called the plumber sooner but just kept forgetting
Hope it's not more than £40 cos that's all the cash i have on me.
oooh plumber's here..
He didn't charge me :j. That's a huge relief. He said he'd left the second valve off last time he called round and that's why nothing happened when I turned the other valve. I know what to do now and at least the house is warming up.
Other spends today - £30.01 on petrol. Must try to keep cash in purse for food shop and our haircuts on saturday. It's not how far you fall - it's how high you bounce back.... :jHappiness is not a destination - it's a journey0 -
Ha, beat you - £30.00 in petrol for me today:rotfl:I really need to sort out a new signature!0

The house is starting to warm up nicely. Just as well because I've just read on facebook that it is snowing in the next town
We've had our pancakes - 3 each - now I feel fat and 40. DD did the washing up and cleaned the kitchen up afterwards (she offered) while I cleaned the bathroom.
I've written our shopping list for friday. It's a case of damage limitation now. I have a £2 till spit off a £20 sainsbugs shop. I really don't need too much so I think I can get pretty close to the £20. I'm beginning to wish we hadn't had that burger king on sunday now
Im just about to watch Obsessive Compulsive Cleaners - should be right up my streetIt's not how far you fall - it's how high you bounce back.... :jHappiness is not a destination - it's a journey0 -
I don't know about anyone else but I can't move for Valentine's cards......:rotfl:
I've sorted out my money woesPreviously I had taken my pole classes into account (£50) but as next week's class (which will be the new week 1) won't be until Thursday, the day before payday, I am going to include that money in next month's payments out. So theoretically I am £50 better off.
So I have £40 in my purse - this will cover our haircuts Saturday (£20) and roller-skating Sunday (£13)
The money left in my bank account will cover the food shop and anything dd wants to do next week (half-term).

Got a text from the CSA this morning and 3 weeks money will be paid into my bank account on Tuesday. Excellent. This has really helped me out and makes things much easier for half term week.
I also rather cheekily took advantage of the Bare Minerals offer that was posted on the grabbit board - £120 of make-up for £27.99 and I went through TCB for 10% cashback. I do need some new stuff and this was too good to refuse
Went to sainbugs as planned for the big shop and I am never going to go again unless I have just cash in my purse and a rigid list. I think a1di has really spoilt me. I was so careful and yet it still cost me nearly £50  I had a £3 till spit so used that to bring it down a bit. I did have a box of hair dye and a new razor in the trolley too so that bumped it up by about £12 but even so.....
Tomorrow we are having our hair cut then in the afternoon I have arranged to go for a bike ride with a bloke who was in my class at school. We've chatted on fbook for the last few years but I don't think we have seen each other for nearly 25! He races mountain bikes as a hobby so is used to riding long distances. I told him I wanted to do about 20 miles so he's going to show me a route that he does quite often and thankfully there aren't too many hills :T It will be nice to go with someone who knows what they are doing although I'm worried I will be a bit of a hindrance
On Thursday at pole we have some bloke doing a feature on us so I want to look extra toned and groomed hence the purchase of hair dye and razor :rotfl: Seriously though, the cycling will help as will staying off chocolate for a few days. Hope my new make-up arrives in time too!
