    Thanks HDK, I am finding a big love in cooking and baking at the moment. 13 years ago I made my hobby my career and it has taken this long to find a new hobby/past time.

    Tonight we has balsamic lamb chops, potatoes, green beans and pea puree. I am cheating and we are having shop bought apple crumble for dinner. I have had to do a menu swap for the next 2 nights otherwise we won't be eating until late tomorrow.

    I am missing being at the gym so much but I know I will be aching a lot tomorrow from my physio so I shouldn't worry about it. Looking forward to my own workout and swim tomorrow.

    Most people are away doing adventurous sports at work this week but a handful of us are still at work trying to make the most of the quiet and lack of distractions. I have amazed myself at how much I have done and although I probably won't finish everything I have an achievable plan to move through the workload.

    The annoying thing is my fitness is better than it has been in a long time and has led to me losing almost a stone and having a leaner body. It is just running that is an issue and I have to be able to do it and well for my job. My physiotherapist is better than any personal trainer, if I could permanently work with him and get a balance between inner strength and hardcore exercise I would be a very happy lady.

  • I desperately need to lose weight and Im convinced I should be thin as I go at least 3x a week. Its not fair...

    I have just cooked my first ever chilli, it was a bit watery so a lesson learned for next time. I made an apple crumble for dessert as we needed to use up some apples, it is the best one I have ever made. I am quite happy that I always having baking ingredients in as it means I can make things like this at short notice and have far less waste :D A few months ago I would have panicked at the thought or making 2 courses from scratch so I have come a long way. I don't know why I am surprised, I used to work in kitchens when I was a student :rotfl: although I was given recipe cards to make each dish.

    Looking forward to trying a completely new dish to us tomorrow...belly pork, chorizo and chick pea casserole.

    Dinner smells lovely but unfortunately I got the timing wrong on the baked sweet potatoes and we are still waiting :(

    I am posting a list for today here as I am hoping it will make me do things.

    Take car to garage to check a possible slow puncture
    Gym (and swim if I am quick at the garage)
    Shopping
    Make a tea loaf
    Have at least half an hour doing absolutely nothing
    File a mountain of paperwork that I keep adding to
    Check one cupboard that is not in my inventory
    Ironing

    The top 4 will get done, the bottom 4 seem to keep rolling over onto more lists!

    I decided to have a cuppa before doing anything and then realised I may as well start the tea loaf with extra tea anyway so I have managed to do a bit more. I am going to have some me time and then try and do my paperwork before Mr AJM comes in from work.
