    Breakfast
    Wholemeal toast and spread
    Lunch
    Oat griddle bread with hummus. Bread made by mixing boiling water with knob of spread melted in it into oats. Roll out and cok for couple of minutes on griddle. Keep wrapped in clean towel while still warm to steam them soft. For the hummus, blend 3/4 tin chick peas until smooth with a little of its brine for flavour and melted spread for consistency.
    Green Pea and Veg Broth (use whole pack and cook with mixed veg until thickened and broken down into the liquid when stirred. Flavour with a knob of spread)
    Dinners
    Noodles with shredded cabbage and mixed veg x 2 Dress with a little melted spread. (I wouldn't use the sachet as not vegggie, but you could if you had no problem with it.)
    Green Pea and veg broth x 1 (as above)
    Bean burgers with green cabbage x 2 blend 3/4 tin kidney beans and mixed frozen veg then enough oats to firm up. Shape into 4 burgers. Fry in a ittle spread or bake until crisp.
    Mixed pulse pot pie with green cabbage x2 make a pastry with a knob of melted spread and cold water mixed with oats. Roll out to line a greased dish or dinner plate. Fill with lightly mashed remaining chick peas and kidney beans in a little of the tin liquid to moisten - you could have held back peas and cooked separate to soup if liked - and some frozen veg. Top with a pastry lid. Bake at 180 for about 40 minutes.

    boodle thats some really good meal plans, we're not veggie so hubby wouldn't be keen on them but i mighty try a few of them as our veggie meals :)

    Have you ever tried the oat griddle bread? i'm tempted to give that ago just to see what it's like :)

    This one is a wee bit over at £7.09.

    Breakfasts
    Porridge with sultanas or wholemeal toast with spread
    Lunch
    Broth made wih a littl barley, veg and water cooked until thickcned a bit and flavour with spread. Slic
    or Barley Salad, barley cooked al dente with mixed veg then a little knob of spread melted through along with some sultanas
    Dinners
    Barley Risotto x 2 (basically warm version of the salad above)
    Sausage and stuffing pie with green cabbage and veg x2 - oat pastry like in last post, filled with sausage mix stretched with stuffing mix and some oats, with sultanas in too if liked
    Sausages with skirlie x 2 - same sausage mix as above, and skirlie made a little like this with oats in melted butter and water with shredded green cabbage until an almost mash potato consistency (as they are fine oats rather than rolled like in the recipe)
    Bubble and Squeak/Hash x 1 - keep a little bit of barley mix, sausage mix and perhaps skirlie back. Fry up with added mixed veg.
    Snacks
    Sultana Oatcakes (melt knob spread in boiling water and mix to firm dough with oats and sultanas. Roll and cut out. Bake about 10 minutes at 200C)

    I haven't quintwins but am going to give it a go this lunchtime :) should be nice and filling. I have used oats in other things in place of flour like pancakes and similar griddle breads so don't see why it shouldn't work out. Pleased they gave you a couple of ideas :) I like reading through the frugal plans when I get a chance so big thanks for everyone's efforts :)

    ETA just thought if the breads go too crisp (I have done this before with flour tortillas by cooking too long!) just use them to break and dunk in the hummus as a crispbread.

    I think i'll try it at the start of the week, i like different breads spread with mayo, topped with chilli and cheese :) the differnet breads give you all sorts of different textures.

    I recently found this blog threw another one i read this is a very interesting post and i was impressed by just how much food she got for so little, ok over our budget's set here but theres lost of fruit and veg in her diet i'm still reading threw her blog but i have come across a few good veggie meals i'm gonna try aswell.

    Yes I tried to make sure there was plenty of fruit and veg colours in the menus though it is repetitive on a budget.

    I tried the oat griddle breads and they were lovely. The oats mean the dough is very durable and so good to roll out very thinly. They are quite sweet because oats, naturally, just are quite sweet and had gave me a flavour memory of pancakes. They would be great with peanut butter and jam for roll-ups. I didn't have any hummus but tried it with pease pudding - me and the little ones liked them very much. They ceratinly add a bit more protein than usual flour flatbreads and plenty vitamins and minerals from the fortification.

    £7.06 menu

    Breakfasts
    Breakfast Muffin Breads with orange juice, make by mixing the packet of dried fruit into 200g self raising flour, then 100g spread melted, around 100ml mixed water and soya milk and 1 tsp vinegar. Spoon into 14 greased muffin tins. Bake at 180C for 15 minutes.
    Lunches
    Petit Pain filled with Nigella's Rainbow Room Salad x 6 toss vinegar and orange juice into grated carrot and peanuts then put little in each bread roll which you have spread with a scraping of marg.
    Pizza Scones x 1 rub 50g spread into 200g flour, then mix in 100ml water and 1 tsp vinegar; shape into 4 rounds and make a nest-like indentation in the top; add a little smear of passata and a sprinkling of frozen mixed veg; bake at 180C for 20 minutes. Keep 2 for a main dinner - see below.
    Dinners
    Pizza scones with baked beans x 1
    Creamy Roasted Carrot and Orange Soup with flatbreads x 2 roast carrots in a little spread to give them flavour (remove some roasted carrots for the mixed veg pot below) then blend with water and a splash of milk and orange juice. Make the flatbreads by mixing a little knob of melted spread and water into flour to make a pliable dough. Roll out and bake on high or griddle for around 10 minutes until cooked through.
    Bean Pot and flatbreads x 2 simmer the kidney beans with their liquid (saving a little liquid for broth tomorrow) and frozen veg in a mixture of passata and water until heated through. Serve with flatbreads as above.
    Mixed Vegetable Pot and Dumplings x 2 Add frozen mixed veg and roasted carrots to tin of baked beans in a pan. Add around 200ml water to thin out. Blend briefly to make it thicker if liked. For the dumplings, mix a splash of vinegar and a spoonful of melted spread into 100g self raising flour, adding enough water to bring it to a sticky dough. Add spoonfuls of the dumpling dough to the pan. Simmer for 20-30 minutes until the dumplings have cooked through.

    Breakfast
    Wholemeal toast and spread with orange juice
    Lunch
    Petit pain with bean pate x 6 blend kidney beans with enough of its liquid to make it thinly spreadable and add a knob of melted spread for consistency
    Borcht x 1 roughly blend the beetroot with water + a splash of orange juice and milk and heat with diced mixed veg in. Would be nicer with HG chives if you had some. Have chilled on warm days. Most of this is for 2 dinners below.
    Dinners
    Borcht x 2 save a couple heaped tbsp instant mash to add to dinner version on reheating
    Cottage Pie x 2 make up the mince, add veg. Top with made up mash and bake
    Bubble and Squeak x 1 fry made up mash, a few tbsp mince, and veggies or bake in greased dish
    Spaghetti "Bolognese" x 2 cook mince with the veggies and mix into cooked spaghetti
    Snacks
    cups of tea
    smoothie - freeze banana in chunks then add a couple of chunks to milk, splash of orange and water ; blend until smooth.

    One more for the road! No chance to do much else with a baby who has decided to feed all day... also explains all my onehanded typos, sorry bout those.

    Cranberry or raisin scones x 4, make scones by rubbing 50g spread into 200g flour with a pinch of pepper, then add 100ml mixed milk and water with a smear of mustard and fruit of your choice. Shape into 8 scones andbake 20 mins at 180C.
    Lentil soup x 3 made as below
    Dinners
    Moussaka x 2 - cook lentils with veg in half passata half water, then pop in an oven dish. Add sliced potatoes. Make savoury sauce by melting spread in a pan, mix in a heaped tbsp flour and cook a minute, then stir in around 100ml milk and same of wter. flavour with mustard. pour over the potatoes. Bake for around 40 minutes at 180C.
    Lentil Soup x 1 - cook lentils, diced potato or two, and veg in water flavour with a little mustard and pepper for about an hour until thickened and broken down. Save rest for lunches.
    Gnocchi x 2 cook and mash potatoes with a little spread. mix in enough flour to make a pliable dough. Roll into balls or a long cylinder and cut off slices. Cook in simmering water for 3-4 minutes until they rise to the surface. Toss in a little spread and pepper. Serve with salad.
    Cottage cobbler x 2 - as mousaka lentil base. top with scones made as lunchtime ones without the fruit and mustard.
    Snacks
    Tea
    Mango or Mango and black pepper cookies - add a little pepper to 200g flour if you want it for pep. Rub in 150g marg. Mix in the mango pieces and squeeze the dough together, add a wee drop of milk or water if needed to bring together. Roll out and cut with a shot glass. Bake around 12 minutes at 180C. Leave about 5 minutes to set and harden before tranferring to wire rack to thoroughly cool.
