Half a French stick, two rashers of bacon, two sausages, two eggs. Possibly some sliced mushrooms. Tomato ketchup and/or brown sauce.

OK, not a balanced meal, unless you find the exact mid-point of the baguette.

This is one of thriftlady's recipies (copied and pasted as I wasn't sure how to do a link to an individual post - hope you don't mind thriftlady) . As thriftlady says it really is delicious.

    Potato, bacon and onion hotpot
This is one of the most delicious dishes I know.

    2hrs cooking, serves 4-6

Slice a medium potato per person into thin slices (about 2mm thick)
Slice one large onion (or 2 small ones!)
Chop up some bacon or ham - 1 rasher per person is what I usually use,but it depends on how much you can spare.

Make a basic white sauce, add cheese if you want (I do).
Sauce - melt a tbsp butter, add a tbsp flour cook until sandy in texture (a roux). Gradually stir in about half a pint of milk. Stir until thickens.

In a deep, greased oven-proof dish layer the potatoes, onion and bacon, season with pepper (no salt because of the bacon)
When you have put half the ingredients in, pour on half the sauce.
Continue with the layers, ending with potato.

Pour on the rest of the sauce.

Bake in the oven at 200c covered for 1 hour. Then take of the lid and bake for a further hour at 180c.

It's easy to increase/decrease quantities for this dish. The long cooking is the secret.
I serve it with carrots and a green veg.

Inspired by a recipe in the Gordon Ramsay Fast Food book, I make a pasta sauce with leek, chopped bacon and chestnut mushrooms - mix it into cooked pasta with some creme fraiche and black pepper and it's yum. (The Gordon Ramsay version uses pancetta rather than bacon.

It freezes well in portions, too, and can be reheated in the microwave from frozen.

Really, really REALLY stupid question here, but I love the sound of this - and that it can be frozen. But do you freeze just the sauce or are you meaning you can freeze after the pasta has been added, so you have a whole meal?

ps. Savinggrace: I'll be making up that soup, as well. Yum.

    Hi

As the title suggests I'm after some inspiration as to what to do with my packet of bacon that I need to use up ?

I have 10 rashers to use tonight (there's only 2 of us!!) I have the usual store cupboard stuff in but just cant think past 'Eggs & Bacon' which isn't really a healthy dinner....

Suppose I could stick some in some pasta but what sort of sauce?

Any other ideas of what I can do with it?
I do Bacon and mayo(bacon snipped up), in a jacket potato add cheese for everyone elso. Though realise that want take up all 10 rashers. I cooked left over bacon rashers and made kids Blt next day for packs. It should keep till next day if cooked.:D

I freeze the lot - pasta and sauce together.

I make double quantities so about 7 or 8 portions - divide it up into boxes and freeze. It is great as a late-night supper if I have been out, as it does not seem to suffer from being nuked in the MW straight out of the freezer, so I don't have to have planned to eat it in advance ;)

    How about Chilli Bacon?

Chop up the bacon and fry off with onions, garlic, chilli etc.
    add chopped toms
    add kidney beans
    add mushrooms

when cooked through, cook some pasta (i use the twirls) and serve along with lovely crusty tiger bread

    or

    Do you have any peas?

    Pea and Bacon Soup?
    ½ onion, sliced
    4 bacon rashers, chopped
    Garlic
    150g frozen peas
    ¼ pint vegetable stock

Fry bacon and onions and add garlic
    add peas and veg stock
    blend till smooth.

  • Same problem here.... bought loads on offer in tesco.

    My plans are.....

bacon and mushroom pasta with either a white sauce of tomato based one.
Chicken and bacon parcels (with stuffing in)
big breakfast (for dinner - yum!)
    Bacon sarnies

    Any other ideas?
