    Hi

    I have lots of bacon in the freezer left over from Christmas and i'm determined not to buy any lunch at work. I am trying to get any ideas of what I can make using bacon for my lunch at work. I've tried to search for recipes but haven't got really far. Here is a list of what i have;

    Bacon
    Pasta
    Rice
    Single Cream
    Sweet Peppers
    Onion
    Parmesan
    Bread

    King Prawn (just found it in the freezer yay:j)

    So far all I can think of is Carbonara and a Bacon Sandwich. Please help me plan my lunch for this week only. Or if someone could please kindly direct me to where i should look. :o

    bacon and onion hotpot?

    bacon fritatta/omelette?

    bacon/onion/tinned toms with pasta?

    a type of minestrone soup - bacon beans and some spice?

    rice salad with pepper and onion (and sweetcorn and peas if you hve? Could be a curry rice?)

  • I just had lunch in my local cafe where I have eaten regularly for years. I always have my fav - egg, bacon and chips - but today I noticed for the first time that they keep a big tupperware box of lightly cooked bacon in the fridge, then just quickly re-fry the bits as and when needed! I have never seen this done before - anyone else come across it? I also must add that i've never been ill after eating there!
  • I don't know about cafes but I've worked in a few hotels and they all did this for the breakfasts in the mornings, sausages were always cooked beforehand too and then flash fried to warm them through. I'm not sure how they get away with it these days but they do :(

  • Years ago I worked in a restaurant where we had club sandwiches on the lunch menu. We used to fry the bacon in the morning, cool it, stick it in the fridge and microwave it when someone ordered a club sandwich (along with sliced chicken breast which would have been poached, cooled and refrigerated in a similar way). I imagine it's very common practice.

    I've never seen a sausage cooked and reheated though.

    I've seen it done too and have even tried it myself. Providing the bacon is promptly chilled after it's first cooked and kept refridgerated it reheats quickly and makes getting breakfast on the table so much easier in the morning.

    I'll add this to the main bacon thread later to keep the suggestions together.
