I love this risotto recipe which uses a packet of bacon:

    http://www.bbcgoodfood.com/recipes/2818/ovenbaked-risotto-

You'll also need risotto rice, an onion, cherry tomatoes, stock, half a glass of white wine and parmesan.

    Delicious!!!
Yeah, whatever. I'm a grown up, I can take it...
  • Fry the bacon with some broccoli (no need for oil, cos the fat/water from the bacon will be enough). Boil some pasta. Add some pine nuts (or sunflower seeds) and some raisins in the bacon/broc. Drain pasta. Mix the bacon etc with the pasta. Add a bit of cream or olive oil to stop it sticking together and serve with some parmesan. My children love broccoli this way!

Inspired by a recipe in the Gordon Ramsay Fast Food book, I make a pasta sauce with leek, chopped bacon and chestnut mushrooms - mix it into cooked pasta with some creme fraiche and black pepper and it's yum. (The Gordon Ramsay version uses pancetta rather than bacon.

It freezes well in portions, too, and can be reheated in the microwave from frozen.

bargain rzl, please could you post the recipe for the sauce.

Originally it was a recipe for cheese soup, but I've left out the cheese.

Sorry about the vague ingredients - I've been making this as a standby for over twenty years.

Chop small some onion, carrot & bacon (I'd go for two carrots, one medium onion and half a pack of bacon), fry gently then add about a tablespoon of flour, or less. Let the flour cook for a minute, stirring. Then add a pint of stock with half teaspoon mustard powder and teaspoon of marmite (you could lose the marmite), a dash of worcester sauce and herbs (I use bouquet garni teabag). Stir it in slowly - effectively you are making a roux so take it steady to avoid lumps. Simmer twenty mins. You can add some grated cheese to melt in at the end.

I love this recipe, and now I'm reminded of it I think it will go into next weeks meal plan - apart from stirring in the stock it is really good tempered and will simmer for ages. Really filling & warming.
    Always another chapter

What I already posted is basically all you need to know. I can't go too much further into it as it's based on a recipe which is in copyright.

However as I don't have the book in front of me, and don't do it quite the way it says in the recipe, I *think* it should be OK, assuming my memory works :o

The sauce is just chestnut mushrooms (125g) bacon (125g) and 2 small-medium leeks. Fry the leeks and bacon, then add the mushrooms. Toss into your pasta with some black pepper and 2-3tbsp of creme fraiche. This makes enough sauce to go with 4 portions of pasta.

I usually double up the quantities.

I have to add that I love this recipe. I have the same cookbook and this is probably my favourite recipe from it.

I've never frozen it though, so thank you for the tip :)

    I love macaroni cheese.
Firstly i cook the pasta doesn't have to be macaroni.
I fry bacon leeks in a pan until soft.
For the cheese sauce i melt 2 teaspoons of butter or margarine in a pan. Mix in 3 tablespoons of cornflour. Stir until mixed together then add about a pint of milk stirring all the time. When the mixture boils it thickens up.
Then i add cheese to taste.
In an oven proof dish i lightly butter so mixture doesn't stick. Add pasta and then spoon the fried bacon and leek over the top.
    Cover with the cheese sauce.
You can sprinkle breadcrubs and cheese over the top.
Finish off with a couple of slices of tomatoes.
Cook at gas mark 4 in the middle of the oven until brown.
Very tasty dish that can be eaten hot or cold the next day with salad.

Other than that how about a bacon butty.LOL
