I use bacon in my stuffed potatoes - bake potatoes however you normally do. When cooked, cut in half and scoop out insides leaving shells. Mix with cooked bacon and onion, some cheese, mushrooms and a bit of marg/butter, put back into the potato skins and zap in the microwave just to reheat everything.0

Wow so many wonderful ideas... i forgot to mention I can't eat potatoes (I have Insulin Resistance and eat Low Gi)
I am liking the the stuffed mushroom idea, the omlette is a last resort idea... I am using the first half a packet for a 'messy sandwich' which is a cooked breakfast on HM Low Gi Rolls but as a dinner (because I really fancy it)... but would feel like a pig eating it twice in one week!

Can you make a stew or casserole with bacon??? Chop and fry bacon, and serve on top of pumpkin/squash soup (including the bacon drippings). Yum!

Why do you need to use it all at once?
I freeze bacon in 2 slices packages, great for a bacon buttie or addting to a meal for one. Only takes 15 mins or so to defrost too, so no long waiting around for that.:hello:0 -
