You could get some dark leafy veg, maybe spinach or in my chinese supermarket they sell pak choi which is really nice, dkice a onion and fry until soft, add a tomatoe chopped up, add sliced up bacon, a few spices, black pepper, paprika etc then add the cut up pakchoi or spinach and add it on top, makes sure there is a little juice at the bottom of pot, or add a little bit of water, enough to help greens to steam, its lovely and now I have said it, will be making it over weejend, add some rice or other. We have decided to do the following:
1) Stuffed Portabello Mushrooms (Cheese, onion and Bacon)
2) Messy Sandwiches (the whole reason i started the thread)
3) Bacon and Mushroom Pizza (made with Low Gi base)
I am however going to make some of the other meal suggestions (risotto with wholewheat rice and the Pumpkin Soups etc) at sometime in the future.

Lightly cook some and portion it up once cool and refreeze it to use another day.
I do this with a few things when i forget to seperate them before freezing.

My suggestion would be a lentil Dahl but add the bacon.its also good for any left over veg like cauliflower of spinach or anything else you have hanging around. It should be good for your low Gi and isnt soup !!! filling and ill taste better the next day or frozen if you have any left.

Bacon is one of the few pre-packaged meats I still buy from the supermarket. I buy it weekly as we often have it for weekend breakfasts. I buy whatever is on offer. Just lately the best deals have been on the larger packs (10 rashers) and we just don't get through it all by the time Monday morning rolls round. To use it up last week I made a bacon, cheese and tomato toastie which was yum, but what other dishes does anyone else use?0

Or any other dishes which call for lardons or ham.
It's cured so there needn't be a worry about "using it up" if it's not on your menu-plan. Pop some of it in the freezer if you're all out of ideas and use it another time. As a non-meat-eating person myself I can't see a problem in using up a mere ten rashers. That could be a cooked breakfast for two for a Sunday brunch round here.0 -
