    I use it to make quiches, pasta bakes and bases for tomato based sauces. Like Valli said freezing is a good option. It does freeze well and you can either defrost it in the fridge the night before you use it or cook it straight from the freezer. :)

    Oops sorry I forgot to say, I dislike the taste of bacon when it's been frozen. I think it's the only food I feel like this with (no idea why).

    We're a family of 4, sometimes one of the kids wants something different, so we open the packet for the others and it doesn't get used up. Other times we've had an offer of 2 packets of 10 rashers for £x and gone slightly into the 2nd packet.

    I add it to all sorts of things

    chicken and bacon pasta bake
    homemade quiche
    carbonara
    lentil and bacon soup
    minestrone soup
    chicken, bacon and leek pie
    BLT
    scrambled eggs bacon and tomatoes for dinner
    cook till really crisp and brown then cool and crumble over salad or on a baked potatoes with sour cream
    add to omlette

    What happens to the taste when it's cooked first before freezing?
    ? I don't like it either way, frozen raw or frozen cooked. The taste is different (to me).:)

    It's great to liven up vegetable side dishes. Some bacon cooked low in a saucepan in a little butter with a whole garlic clove, then take out the clove once the bacon is slightly crispy and add handfulls of spinach or other leafy greens until wilted.

    Also in a potato bake - cook bacon and sliced onion in some butter or olive oil until bacon is cooked and onions are slightly carmelised then cut potatoes in round slices and layer in a casserole dish with potato then some bacon onion mix, then some single cream and a sprinkling of grated cheddar. Do this for a few layers until all is used up and finish with a layer of grated cheese. Bake in the oven until cooked (when you can stick a butter knife easily down to the bottom through the layers).

    My DGS can get through a pack of 16 slices from Iceland in three days .They adore bacon sarnies with tomato ketchup for breakfast or cheese on toast with crunbled up crispy bacon on top for lunch or pasta with cheese,bacon in a sauce for a cheap quick dinner.Bacon is so versatile and just vanishes in their house.I like to make a nice bacon and egg tart (cheaper sort of Quiche Lorraine :):)) and they just wolf it down with salad I top the tart with grated red leicester for a bit of colour.Never have it long enough to go into the freezer .Although I usually have some in there for emergencies

    Flatten and stretch small pieces of bacon. Make up a bit of cheap packet sage and onion stuffing. Wrap a piece of bacon around a little piece of stuffing and cook them in the oven.Tasty snack or with bread and butter a light meal. Good hot or cold and will keep in the fridge. jacxx
  • I am definitely with you on the frozen bacon issue, though I don't know why it doesn't taste the same!

    I use bacon in carbonara and pasts bakes as others have suggested, but also recommend it in chopped up in cheese and bacon scones. They are delicious as a quick snack and don't take too long to make either.

    Bacon and egg pie... it is the only thing that has edible bacon.. disgusting stuff!
