Menu Help ... How do i?......

Make stuffed jackets? Id love to do this but not sure what to stuff them with im a very plain cook so any insperation would be great! ..

Also HM Burgers? how do i make these im sure prepacked arnt good for you so would love to make my own,

andddd..... Potato Bakes? always sound lovely but have no idea where to start!

Many thanks in advance for any ideas ... and family would be soo grateful to as i think they are getting bored of the normal spag bol, jackets, roast, type meals! ..

    stuffed jacket potatoes or loaded potatoes skins as we call them are very simple.

    Put your potatoes into the oven and cook as usual when they are done cut in half and scoop out the inside leaving a thin layer of potato for protection. I then mix whatever filling I want into the potato - can be anything you want. Then divide the mixture between the potato skins and then put back in the oven until the top is crispy.

    I hope that helps.

    I think burgers are made with mince and whatever else you want such as onions and herbs, then add an egg to bind and then cook - someone who knows more will be along shortly

    HM Burgers are easy.

    Just finely chop an onion, add it to mince and mix it all up. Add herbs, pepper etc. And a beaten egg to stick it all together. Then shape into burger shapes (using your hand or whatever) and grill. ;)

    Buy a piece of beef - not fillet, sirloin or steak (no need for the expense) - I use skirt or chuck. Go to a butcher, NOT the supermarket.

    If you have a food processor, just buy the piece whole. Chop it roughly and use the "pulse" button on the processor to grind it, gently. Don't over process it otherwise the meat will grind to a mush. It doesn't matter if it's roughly processed, just don't overdo it.

    Mix the processed meat with chopped onions & herbs. Use your hands to make rough burgers/patties. If you want perfectly round burgers, press the mix into a large pastry cutter.

    Place the patties on a tray and refrigerate them, just to make them firm. Then bake in the oven - or grill or fry.

    Leave the burger to get a nice crust before you turn it over, to help prevent it falling apart.

    If you don't have a food processor, ask the butcher to mince the piece of meat you choose, then proceed as above adding onions & herbs.

    Not necessary to add egg or breadcrumbs, although some people like to.

    You will end up with a 100% meat burger, based on the meat you've bought. Effectively, this is a piece of ground steak and you can cook it as such e.g. blue, rare, medium or well done. Hell, you can even have it raw if you like - Steak Tartare :)

    Stuffed jackets: use whatever you fancy really. sliced sausage or ham and a little cheese is nice. or if you're veggie then small chopped roasted veg. These are my favourites.

    Potato bake: My fave is part boil potatoes slices (not too long, about 5-10 mins), then in an oven proof dish layer potato and sliced veg (peppers, mushrooms and onions are nice) or bacon and mushrooms until the dish is full then whisk up a couple of eggs, add a splash of milk and pour over the potato mixture and cook in the oven on a medium heat until it bubbles and is golden.

    Stuffed jackets:

    Mix some grated cheese, fried onion, black pepper and a little mustard powder in a bowl. Cut the cooked potatoes in half, scoop out the centre and mix with the cheese mixture. Pop the mixture back into the potato shells and return to the oven until browned. Grilled bacon is good in these too.


    Homemade burgers:

    In a bowl add mince (preferably lean steak mince), finely chopped onion, garlic, mixed herbs, parsley, salt, black pepper and an egg. Mix it all together. Take a lump out at a time, roll into a ball and flatten. Cook for about six minutes on each side.


    Potato bakes:

    Slice potatoes thinly.

    Arrange a layer in the bottom of the dish, put some finely sliced onion, and grated cheese, crispy bacon bits and black pepper on top. Arrange next layer of potatoes....

    Repeat until the dish is full.

    Mix a couple of spoonfuls of cornflour with some milk. Then mix the milk with some stock (a chicken stock cube made up in water is fine). Pour the lot over the potatoes. Dot some butter on top and pop into the oven (180 degrees) and cook for a couple of hours.

    Very hard to beat Delia's Potato boulangeres or Potato Daupinoise.
