    frozen bananas make a good "lolly" if it ever gets hot.
    Dip them in chocolate for a "choc ice"!

    If you like peanut butter then this recipe from Rachel Allen for banana and peanut butter muffins is fantastic. I made them yesterday and had to stop myself scoffing the lot.

    I add a mashed banana to chocolate cakes mixture and bake as usual. It's lovely.






  • Here's a recipe for Carrot cake which included Banana's- I think it acutally is called Passion Cake when it has Banana's in it too. I've used this recipe for years and it makes a big cake and freezes great.




    CArrot Cake

    This freezes well without the icing



    Ingredients

    10oz
    Plain Flour
    1 tsp
    Baking Soda
    2tbsp
    Baking Powder
    6oz
    Brown Sugar
    2oz
    Mixed Nuts
    3
    Eggs
    2
    Well ripened bananas, mashed
    6 floz
    Sunflower Oil
    6oz
    Finley Grated Carrots
    Icing
    3oz
    marg/butter
    2ox
    cream chese
    6oz
    icing sugar
    1oz
    mixed Nuts




    Directions

    1. Mix all dry ingredient together
    2. Add eggs, bananas, carrots and oil
    3. Mix for a further 5 minutes
    4. Bake at 180OC for 45-50minutes in a 12” by 6” tin
    Icing
    1. Mix together cream cheese, butter and icing sugar
    2. Spread on cake when cooled and top with nuts
    3. Serves 12-16

    Hi,

    I have quite a few banana recipes on my blog.
    I am also writing a banana recipe book, but I am a bit slow with it at moment. Have quite a few recipes I can put on my blog if you are looking for anything in particular. Bananas can also be used in savoury dishes such as Sweet potato, chickpea and banana curry. If your interested in the recipe, I will post it on my blog for you. Savoury dishes usually use green or just ripe bananas rather than brown. There is a recipe for banana flapjacks on this site that is good also.

    summer recipe really - but you can put bananas on the BBQ and they are delish! no reason why you cant grill them until they blacken!
    also, caremelised bananas are fantastic! just make caramel and chuck chunks of banana in!
    my mum used to add sliced banana to jellies.
    and of course - good old-fashioned banana split! either use a banana cut in half lengthways or two bananas and place on a plate about and inch or so apart - fill the middle with ice-cream top with whipped cream and grated chocolate (or sprinkles), and a couple of those triangular wafers if you want.
  • As the dates are the same this year, I will be cooking a St. Valentine's Day/Chinese New Year dinner for my special lady friend. The dessert course is going to be fried bananas. I have never cooked these before, so I will be doing a practice run sometime this week. If it works, I will post the recipe.
    The acquisition of wealth is no longer the driving force in my life. :)

    I've just made some yummy date and banana chutney - probably enough to last for a year! lol. http://chutneyrecipe.us/2006/11/date-and-banana-chutney.html is one example but if you do a Google search there are lots more.
