Hi shjo,
There's an earlier thread with lots of ideas that should help so I've added your thread to it to keep the suggestions together.

You can freeze bananas if you have really gone overboard.....when you take them out of the freezer they look awful, the skin will be all black, but under the skin they will be absolutely fine! So obviously not much use for lunchboxes, but fine if you are baking or making banana custard or whatever...
Just seperate the bananas before you freeze then, i.e. dont freeze them as a whole bunch, because its almost impossible to pull one from the bunch when frozen2016: No Clutter to Be Seen 805/2016

Freeze then use in banana smoothies at a future date (ie. when you aren't sick of the sight of bananas!).
Also some recipes - eg. ordinary fruit cake - work fine if you replace each beaten egg with a very thoroughly mashed banana, without tasting at all of banana. I got this tip from a friend who is vegan.

Also don't forget you can make the banana bread, then either serve it hot with custard as a pudding or freeze it for future date (see above). I love being able to get a home-baked cake out of the freezer.0
