I make banana brownies which are pretty yummy. I'll see if I can find the recipe just now.....
Ingredients
100g/4oz of butter, melted
25g/1 oz cocoa powder, sifted
175g/6oz soft brown sugar
2 medium eggs, beaten
few drops of vanilla extract
50g/2 oz self raising flour
1 large banana peeled and chopped finely
25g/1oz shelled walnuts, roughly chopped (I leave these out when I make them and replace them with chocolate bits)
Method
Preheat oven to 190ºC/375ºF/Gas Mark 5. Grease and line a 18cm/7 inch square tin
Mix the butter and cocoa powder together well. In a bowl, whisk together the sugar, eggs and vanilla extract until pale, creamy and thick in volume
Beat in the cocoa mixture, then fold in the remaining ingredients
Spoon into the prepared tin and smooth the surface. Bake for 35 - 40 minutes or until well risen and firm to the touch
Leave to cool in the tin before removing. Peel away the paper and then dust with cocoa powder and cut into pieces.0 -
Bananas and custard is the most yummy thing in the world, perfect with old bananas, thinly sliced!!

Hi,
I have 3 over ripe bananas sitting in my fruit bowl - any ideas on what to do with them?
Only problem I have is my fridge is knackered just now so I have no milk or other fridge related items so smoothies etc are out:mad:
I do have flour etc but don't have any recipes that incorporate bananas:rotfl:

Banana loaf is the obvious choice - it tastes best with overripe bananas. One of the mods will probably be along to show you where the recipe is.

Only problem I have is my fridge is knackered just now so I have no milk or other fridge related items so smoothies etc are out:mad:
Do you have a freezer. ?
I always peel over ripe 'nanas, chop them in half, place in a freezer bag and then freeze them.
Then whenever I want a smoothie (i.e. in the future when your fridge is fixed / you have milk) you can just lift out a couple of pieces, and add to your smoothie mix before blending.
An added bonus is that your smoothie is then nice and cold

Funny you should say that, my fridge was hot but freezer still worked until the Indesit man came today and now freezer doesn't work either:eek:
Never thought of freezing them for a future smoothie though, great idea.
I've found all the recipes now so will make banana loaf tonight to get them used up.0 -
I know this is no good for you now, but my little one love banana lollies
cut bananas in half, put lolly stick in them, melt some chocolate and cover bananas, sprinkle with 100s & 1000s & freeze! Very messy, but really nice and if you don't have kids - great more for you!0
