    Make banana chutney - Preservers year, post 115 (sorry, don't know how to do links:o) Have just finished potting up a batch 10 minutes ago. It uses 4lb bananas. HTH :D.

  • Thanks for the tips - sorry didn't realise there was already a (huge) thread on the topic of excess bananas!!!! Will freeze some and must try the sainsburys pudding idea! Yum yum.

    hi i have loads of bananas that are going off what can i do with them??? i was thinking banana cake but shame on me have no flour or eggs!!! any ideas??? will they freeze?

    you can freeze bananas, do it in slices then you can blitz them when they are frozen and it makes a quite icecream like substance... believe it or not...

    I have made Thriftladys banana muffins and they are devine.drooling-6.gif I threw a King size mars bar in. I used another recipe from here which was not so good so stick to this one. Props to Thriftlady for this one

    good banana muffin recipe which can be made in a cake or loaf tin if you give it a bit longer in the oven. Thriftlady

    Btw, you can freeze bananas for baking .Just put them unpeeled in a bag in the freezer.I always do this with over-ripe ones-perfect for baking.

    Banana Muffins/Cake/loaf

    Put in a large mixing bowl
    10 oz plain flour
    1 tsp baking powder
    1 tsp bicarb
    1/2 tsp salt

    In another bowl mash 3 bananas(the riper,the better)
    Add
    4 oz sugar
    1 egg,beaten with a fork(I never use the egg as dd allergic-you can replace it with 3-4 tbsp of milk)
    2-3 fl oz milk
    3 fl oz vegetable oil or melted butter

    Add the liquid ingredients to the dry and combine thoroughly,BUT be careful not to over-beat,on no account use an electric beater,the mixture should look quite lumpy.

    Line a muffin tin with muffin cases,or grease the cups well and fill about 3/4 of the way up.Bake at 190-200c for about 25 mins.
    If you want to make a cake pour mixture into a greased 1lb loaf tin or a 7 inch round cake tin and bake for about 35 mins.check for doneness with a skewer-if it comes out of the centre of the cake clean it's cooked.
    I usually double up the mixture,so I'm not entirely sure about the tin sizes ,I'm afraid.

    You can obviously add chopped nuts,raisins,dried apricots or choc chips.Some mixed spice is nice too./END

    Baked bananas are lovely. Cut into big chunks., Make a "marinade" of honey and water - equal quantities, add some cinnamon/nutmeg.mixed spice /cocoa (half a teaspoon of something )add raisins if you like them or other dried fruit. Mix with bananas. Crumble some old soggy biscuits over and some chocolate if you are feeling daring. Bake for about 15 mins. Add a dash of lemon juice too if you like.

    Nice on their own or with ice cream/yoghurt. Quite filling too.

    You could make smoothies, or bannoffee

    I make banana flapjacks:
    13oz oats
    4oz marg/butter
    3-4 tbsp sugaror honey or syrup
    1/2 tsp baking powder
    2 bananas
    and vanilla essence, cake spice, coconut or any other flavours I feel like.
    oven 170C GM 4
    melt marg and sugar and mix into the dry ingredients
    put into a tray approx 8" by 8" and bake for 15 - 20 minutes
    cut into squares while still warm.
    I sometimes add some milk to this to make soft oat squares too.

    I also use bananas one for one as egg replacers as I don't eat eggs.
