    I have recently moved into a house where there were quite a lot of marrow plants in the garden and we suddenly seemed to have hundreds of them and no idea how to cook them:rolleyes:

    Anyway, the nicest recipe we have found is for stuffed marrow. Basically you cut the marrow in half lengthways and scoop out the seeds. You should also peel it although we found this very difficult and don't always bother. Once you have stuffed the marrow you bake it in the oven - about 50 minutes on 180 oC - until the marrow goes soft.

    We have mainly used cous cous based fillings: soak it in vegetable stock (maybe with a splash of wine) and then add onions, peppers, plenty of fresh herbs (we have loads of mint and basil in our garden which is lovely) and really anything else you have to hand. We are not vegetarians and often also add chorizo sausage although you obviously won't want to. If you eat cheese it's lovely to sprinkle the top with some cheddar or your favourite cheese as this makes it especially tasty.

    We tend to just eat the stuffed marrow without anything else - have thought about serving it with potatoes but it's suprisingly filling.

    I'm getting hungry now just thinking about it. Would be interested to hear anyone else's marrow recipes too as we have plenty more in the garden!

  • Was at my in laws over the w/e and MIL cooked a marrow of ours. I wasn't looking forward to it, but it was lovely! Peel marrow and cut into 2cm slices. Halve these if the marrow is huge, and boil for about 5 mins until tender. Drain, and add a knob of butter. Fry until starting to colour, turn, and add more butter, if desired. Season with pepper and cayenne.

    I like thick slices stuffed with a cooked rice and veg mix, topped with cheese and cooked in the oven.

    Thankyou everyone, the recipes all sound lovely, I'm going to have to ask my son to bring some more over just to try them all LOL

  • You'll always find the mega index in the 'stickies' on the front page of Old Style. They're the ones with the 'pin' in them at the top of the page. The others are useful too so have a look at your leisure.

    Stuffed marrow is one of my favourites too, I use Sosmix as the main stuffing, with whatever I've got lying around added too.

    Just a quick warning though, the first time I did it, I didn't put much thought into the string I used to tie it back together. The stuff I used wasn't obviously plasticky but still sort of melted and it all went horribly wrong. I also once used hairy string and that was a disaster as well. So do get the proper string, or if you use hairy string, wrap a strip of foil around the marrow just where the string goes.
    When I had my loft converted back into a loft, the neighbours came around and scoffed, and called me retro.

    Due to a spot of tardiness on my part, I am now the proud owner of 4 marrows from my courgette plant. Ordinarily, I would consider them fit for the compost heap only but Mrs Generali wants to cook with them and, worse, eat them.

    Any ideas for recipes?
  • My dad used to cut the top off make me scoop out all the seeds when i was a kid (smaller hands), put something in it (i assume sugar and stuff) then replace the top and hang them up in an old clean pair of tights in the airing cupboard. Few months down the line the marrow was full of marrow wine. Being a kid I never tasted it but he did it a number of occasions so I assume it was ok! Perhaps google would give you a proper recipe?? The rememberings of my childhood aren't great i only remember hating scooping the gross mushy seeds out.

    I like halve them length-ways, scoop out the innards, chop and mix with leftovers (cooked rice/cooked meat/bolognese sauce/other veg such as peppers and garlic) sprinkle with cheese and bake in the oven.

    Stuff them!

    Peel it, cut it into 2 to 3 inch rings, place in an oven proof dish, fill each ring with a mixture of rice & tinned tomatoes, you can also add some mince or bacon, add stock or gravy nearly up to top of marrow, cover with lid or tinfoil, cook on a medium heat till marrow is soft & rice cooked
