    The marrow will need peeling (skin is tough) and the seeds removing, courgettes if large may need halving/quartering lengthways and the seed centre cutting out.
    In addition to the many ideas from QNMW you can lightly stir-fry (tiny amount of oil) the courgettes then add coconut milk/green curry paste or similar for Thai Green taste, or a decent curry paste for an Indian. Use them in ratatouille. Grate them, then let them drip dry before blending with flour egg seasoning etc to make courgette fritters.
    Other things to do with marrow - use as you would cauliflower for a cauliflower cheese (marrow cheese doesn't sound quite right!). Use in any sort of tomato/saucy/stewy dish as they absorb flavours well, although not tasing of much by themselves. Or if you really want to do something different Marrow Rum (lots of recipes around if you google it). Basically this invloves filling the cavity with dark brown sugar, yeast, and letting it drip through - can be very potent, it will be a long while before you can drink it though - it wont be ready for Christmas (this year anyway)

    I made a huge pot of ratouille tonight with courgettes. Have also done this with marrow, Delicous and a meat free meal which we like on occasion. Served up with boiled spuds and grated cheese and two x 2 portions in the freezer. Thanks to Lidle!

    I've got a lovely recipe for relish using courgettes. It's really simple to make and tastes lovely. Makes about 8 bottles. Can't help with the marrow.
    Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)

  • DH is a big fan of marrow and ginger jam. I peel and dessed the marrow first, then chop small and freeze. When it thaws, it gives out a lot of liquid (which I discard) and this makes the preserve taste better.

    Thanks for all of your replies. Well the huge 'chinese' courgette ended up in a lovely veg lasagne and I froze the rest of it. I fried some of it in olive oil with salt and pepper and it was lovely on its own!
    I'm going to have a go at ratatouille with the marrow next week. I took my girls to see the film Rat-a-touille last week and they are keen for me to make it now!
    I'll let you know how it turns out.

    Hi,
    I am looking for ideas of something exciting to do with a marrow please, i went to the farm shop yesterday and they were selling them for 40p!!!
    The one i got was huuuuuugggggeeeee and as its only me and not DH that likes it i need some ideas please, i did have some boiled last night with my dinner but i forgot how bland it was so any good ideas on how to use it up please?
