What to do with marrow

I made this once with a marrow that I was given. It was really lovely (as well as easy to make) I made it in a bowl with a wooden spoon as I don't have an electric mixer.
Marrow Cake
• 3 eggs, beaten
• 400g caster sugar
• 250ml vegetable oil
• 2 teaspoons vanilla extract
• 375g plain flour
• 3 teaspoons baking powder
• 2 teaspoons ground cinnamon
• 2 teaspoons ground nutmeg
• 225g grated marrow
1. Preheat oven to 170 C / Gas 3. Grease a 1lb loaf tin.
2. In a large bowl, use an electric mixer to beat the eggs until fluffy. Beat in the sugar, oil, and vanilla. Gradually mix in the flour, baking powder, cinnamon and nutmeg. Fold in the marrow. Transfer to the prepared baking dish.
3. Bake 45 minutes in the preheated oven, until a knife inserted in the centre comes out clean.0 -

I make up a stuffing with as much veg as i can stuff in and add something spicy, like fajita seasoning or chilli sauce to give it some kick.
Instead of cutting the marrow lengthways, i cut it in thick slices, take out the seeds then stuff it with the mixture. A bit of cheese on too and then i bake it.
I found this recipe here for a marrow sauce that you use in place of tomato sauce.
If you freeze it, it will turn to sludge when defrosted and probably wouldn't be very nice.
Sauces, jams and chutneys are probably the way to go.0 -
Ah yes I wondered if it would do that in the freezer, shame. Looks like it'll be marrow for tea for the foreseeable future!

I used a marrow that we were given to make a big batch of pasta sauce in the slow cooker.
I diced up the marrow, an onion, a leek and half a butternut squash. Added passata and chopped tomatoes and herbs then cooked in slow cooker for six hours. I then ate some of it as it was (it was quite ratatouille like) and blended the rest to make a smooth sauce that even then marrow haters will eat!:DYummy mummy, runner, baker and procrastinator0 -

Sneaky! A girl after my own heart. That's the kind of thing I did to hide the veggies in food. :T
What about making soup, which you could then freeze?

You can use the marrow like onion rings, spiced, breadcrumbed and deep fried.0
