the lasagna style marrow sounds nice, may try that one thanks. Would this freeze? as hubby will not eat vegetarian meals, to him a meal has to have lots of meat!!!
have found a nice sounding recipe for stuffed marrow using sausage meat, so will think about it tonight.0 -
another recipe
cut cubes of peeled marrow (or unpeeled courgettes for that matter), chop onion and fry in a little oil until softened, add cubes of marrow Add salt to help get the moisture out and cook for quite a while until a lot of the liquid has evaporated (this takes longer than you think!) Add either peeled chopped fresh tomatoes or a well-drained tin. Leave to cool. (this freezes really well at this point)
Using fresh white or brown breadcrumbs - melt a knob of butter and stir in the breadcrumbs until getting slightly crispy - leave to cool.
to assemble plonk marrow mixture with salt and pepper in an ovenproof dish. Mix breadcrumbs with some grated cheese and plenty of thyme. bake until bubbling and the breadcrumbs golden and crispy. We have this a lot as summer veg with a roast. I make the base and the breadcrumb mix and freeze separately and just put together when I need it.
p.s. you obviously don't have to do the butter/breadcrumb thing, but it does make a huge difference - honest!0 -
An easier way then stuffing is to cut in slices about 6/7cm thick and take out seeds so you end up with rings. Microwave for a few minutes until soft (in a covered bowl). Put the rings in a serving dish and pour over ready-prepared bolognaise sauce/savoury mince. It can e finished off in oven with some cheese grated over. It's a lazy way instead of stuffing with mince, tying/baking etc.0

The marrow 'lasagne' will freeze well. Both me and my mum live with 'if theres no meat on my plate its not a meal' men so this is made and frozen into portions very regularly!!0

How can I freeze my marrows? I've read some advice saying don't they're too watery, some saying do but must be blanched first, some saying just dice and freeze... any ideas? Thanks!0

I haven't actually done this receipe but saw Nigel Slater on TV do it. He sliced the marrow into equal slices, quite thick. Took out the middle, which I think are the seeds, and turned them onto a baking sheet and stuffed them with cherry tomatoes, chilli and feta cheese (can't remember if he put anything else in?) Then he drizzled with oil and baked them in the oven. The marrow is quite watery but apparently soaks up flavours very well. It looked really lovely and i thought i might have a go myself, if ever we have a marrow!!
