    Oh I keen to hear more suggestions as my courgettes have turned into marrows too!

  • I am stuffing a marrow with sausagemeat this evening, so wish me well.

    Can't decide whether to do it as a whole or cut it into rings and roast it that way. Might make the sausage meat nice and brown. I'll put some jackets in at the same time, naturally. Could do a crumble with the rest of the oven space, since it's chilly.

    Sounds like a plan.

    I was given one the other day and didn't know whatt to do with it so I cut it into slices. I then fried onion and garlic in a pan, added some frozen mixed veg, grated cheddar and breadcrumbs and used this mixture to stuff the marrow slices. Roasted them in the oven. Had this as an accompaniment to a meal and it was lovely!

  • Just to say that I peeled the marrow, cut it into rounds and squeezed a sausage into each round. I put a spicy tomato pasta sauce from a jar around the rings. Then, I baked it uncovered in the oven. However the sausage meat shrank slightly and the marrow was still watery on the plate, even though the sauce seemed to have thickened on the top. Marrow chutney next time.
  • Someone at work has given me a large marrow, i've never cooked one before and i'm unsure what to do with it. Does anyone have any nice recipes they can suggest? someone has suggested i stuff it, but it looks like it will be difficult to chop in half. Any advise welcome, shame to waste it.

    I have also been given a huge marrow and this is what I plan to do with it..... its the yummiest way I have ever had marrow and is pretty easy!Firstly chop a couple of onions and fry til soft add some tomato paste and 2 tins of tomatoes and some herbs and just let it simmer away for 30 mins or so until its a nice thick sauce.While thats cooking peel the marrow, use a small knife not a peeler. Then cut it in half, the flesh is not hard so it shouldn't be too dificult, then scoop out the seeds. Cut the marrow up into 1 inch ish squares coat in seasoned flour ( I pour some flour on a plate then just chuck the marrow on top and shake off any excess. Fry off in batches until they are going nice and brown and a bit crispy.Then slice a load of cheese and layer each up in a lasange dish, tomato sauce, marrow, cheese, tomato sauce, marrow, cheese until it has all gone and end with a layer of cheese. bake it in the oven until it is bubbling and the cheese is browned. We would have it with peas.Try not to use too much oil with the marrow because it can get a bit greasy otherwise.HTH, Becky

    but can't for the life of me remember where it was :(
