    My mum used to make marrow and ginger jam.

  • I second the jam idea, the recipe is on the 'what to do with marrow thread'. No one will believe you that it is absolutly delicious so I call it 'surprising ginger jam' and don't tell 'em what the surprise is till they've tried it!

    I just asked this question at work last week and several of my elderly residents came up with the same idea which is marrow rum!

    Apparently, you cut off the END of the marrow and scoop out all the seeds lengthways if you see what I mean (so you`re left with an almost complete marrow rather than two halves). You then stick a knitting needle in the other end so you have marrow, with cavity, with small hole in the bottom. You then pack the cavity with brown sugar, put the "top" back on, stick it down a pair of tights and suspend it somewhere with a container underneath to catch the drips. It takes about two months to mature but is apparently delicious and alcoholic! There are loads of instructions on the web (just google marrow rum), and lots of different variations. Here is one.

    So, if you have a glut, or are tired of the stuffed marrow recipes, might be worth giving it a whirl?

    Well i decided on aking the marrow and ginger jam as i am on a very tight budget this year and it will make an ideal xmas pressie to add to the pickles and creams i have made.

    CHOCCLARE........What an amazing idea will hope to get another marrow so i can try this !!

    Sorry a bit late with this reply, but looking in Delias soup recipes in her Complete cookery course there is a recipe for Eliza Actons Vegetable Mulligatawny Soup that uses one and a half pounds (700g) of marrow or courgettes, if that's any help for the future.

    I havent done this for years. I've scooped out the middle and I'm filling with a chilli mince mix. I know I need to wrap in foil, how long do I bake it for? Would it be OK with a cheese sauce or dont you think that will be needed?
    Loved our trip to the West Coast USA. Death Valley is the place to go!

    I bake mine for an hour and sprinkle on some grated cheese for the last 5 mins. Yum! :j

    So do you slice yours in rings or slice then length ways?

    As you've scraped it inside then I'd go ahead and bake it whole, very professional. Personally I cut it into rings, microwave the rings then pour in my HM bolognese sauce:o
