  • Many thanks, especially to Pink-Winged for adding the links - plenty of ideas there and the link to sweet marrow recipes, that's the pie I was trying to remember so have put that in my favourites file straight away.

    Hadn't thought of keeping them in the freezer in cubes to add to any and everything, as soon as I have some space in the freezer, in they will go.

  • I made this recipe last week with the last of our marrow and it was sooooo delish. Peel and deseed the marrow, cut into smallish cubes. Chop an onion and some mushrooms and either chop some fresh toms or use a tin of chopped toms. Put some olive oil in a large pan, add the onion and marrow and a couple of garlic cloves if you have them. Fry for around five mins, then put a lid on pan and cook for 10 mins. Add the mushroom, toms, seasoning ( I used salt, black pepper, coriander and tarragon) and some sweet chilli sauce (I put about a tablespoon in). Stir well, put lid back on and simmer for about 30 mins on a low heat or until marrow is soft. We had some sausages with ours and everybody wanted seconds of the marrow.

    I don't like the taste of marrow very much but I do find it useful as an extender in savoury recipes, for cakes and a new use I found today. Just as well as I've still got eight to use up.

    I was making fruit compote and had a large piece of marrow left in the fridge so I thought I'd try and see if it would replace one of the cooking apples in the recipe. So I used two bramleys and the piece of marrow, chopped very small and put in with some jostaberries. And the result?
    Well I can't taste it as marrow, it all tastes like fruit and I've now got two apples left to make a crumble.

    I used to make marrow & ginger jam. It's sort of Christmassy & wintery & I loved it on toast & crumpets. I also used to use it in home made sponge cakes with a bit of plain icing on the top. People can be a bit iffy when you say it's got marrrow in it but you can't taste it, and so I just used to say it was 'ginger jam' and everyone would scoff it down and say how much they liked it. Haven't made it for a while (as haven't grown any marrows!) but as far as I remember the recipe was only water, crystallised ginger, lemons & sugar.

    i have been given an ennormous marrow that has been hiding in my cupboard for weeks and i simply dont know what to do with it ?
    Any ideas....i could possibly get 2 dinners out of it it is that big but am stumped as a tasty dish.
    I have a couple of friends coming on saturday night so could use it then......tips ???????? x

    Eliza - Been there and got the T shirt as we had four courgette plants which went beserk and I've now got several large marrows sitting in the garage waiting to go to heaven.
    I'm going to cut mine in two lengthways, scoop out the seeds and bake them as two large canoes until they're soft. I'll then fill the hollow with a layer of separately cooked rice or pasta shells and pour over some bolognese sauce. (or you could use a beef, lamb or chicken curry sauce if you want something more spicey. If you use the bolognese sauce, you can sprinkle with grated cheese and chopped parsley to pretty it up if you've got guests.

    Stuffed marrow is lovely...

    Peel the marrow, slice it in two and scoop out the seeds.
    Fill it with homemade bolognese sauce or chilli and bake in the oven (180 degrees) until the marrow is cooked.
    Add grated cheese and return it to the oven until the cheese melts.
    Serve with a green salad and baby potatoes.

    we made marrow curry and that was lovely. in a large saucepan fryonion, garlic and fresh ginger until translucent...then add some spices or curry powder and fry for a couple of minutes. add a tin of tomatoes and the cubed marrow then put the lid on and leave to simmer for about 15 -20 mins. the marrow should be cooked but not mushy and it should have absorbed the flavours really well.
