Stuff it, roast it or chutney it?
I've also been flash frying my overgrown courgettes - very tasty if I do say so myself:beer:0 -
stuffed marrow is fab, you can either use a sausage meat base or pulses and vegetables.
cut the marrow in half length ways and scoop out the seeds so you have a hollow I try and avoid scooping right to the ends or the juices run out.
for the sausagemeat one, i add in onions, herbs, worcester sauce some breadcrumbs and use an egg to bind. I dont have a recipe as such i do it by eye.
put in a medium oven for 20 mins then add grated cheese and cook for another 20 mins or so and its yummy especially with a spicy tomatoe sauce0 -

Saute cubed marrow with onions and garlic until softened
Add carton of passata and a few dollops of creme fraiche, simmer for a bit. Add your preferred herbs
Tip into an oven dish, sprinkle breadcrumbs and some grated cheese over the the top, bakeMy TV is broken!

Marrow bake - you need onion, marrow, tomatoes, thyme, butter/equivalent, fresh breadcrumbs, cheese. Quanitities depend on size of dish.
Peel and chop onion, marrow, tomatoes. Soften onion in butter, add marrow and tomatoes and cook for a couple of minutes. put in baking dish. (If too much liquid just strain them a bit.) Melt tbsp butter and fry breadcrumbs until a bit crispy. When cooled a bit mix with grated cheese and put on dish as topping. Bake until bubbly and eat. Freezes really well but freeze breadcrumb/cheese mix separately and crumble on before baking.0 -

some time ago i ended up with lots of marrows!!! i spent ages searching and found the following on other threads. unfortunatley i just copied and pasted into word and am not sure who the original posters were - but here they are:

the recipe you mentioned in the first post is nearly identical to one he did:
fry off some cubed bacon/pancette. when it's released fat add small pieces of courgette, about the same size as the bacon so it all cooks the same.
cook any type of pasta.
mix together 2 egg yolks, a splash of cream and some grated parmesan.
once pasta is cooked mix all of the above together and add a splash of the pasta cooking water to loosen the sauce
lasagne using courgettes sliced longways instead of sheets of lasagne, they also had a layer of red roasted peppers as well and finished up with just one layer of pasta
baked courgette stuffed with mushrooms, ham and cheese
Courgette and Cheese Soup
1 lb courgettes, trimmed and sliced
1 lg onion, skinned and chopped
1 litre vegetable stock
salt and freshly ground black pepper
60z garlic and herb cheese (eg Philadelphia)
150ml single cream
Put the courgettes and onion in a large saucepan with the stock. Bring to the boil, then lower the heat, cover the pan & simmer for 20 minutes or until the courgettes are soft. Sieve or puree the soup in a blender or food processor. Put the cheese in the rinsed out pan and gradually work in the pureed soup with a wooden spoon.
Reheat the soup gently, stirring constantly, then add the cream and heat through without boiling. Add seasoning to taste.

Brilliant Bacon Pasta
Ingredients - 275g smoked streaky bacon , 2 courgettes , garlic bulb , 40g English medium mature Cheddar , 200ml creme fraiche , 500g pasta shapes.
1. Boil a large pan of salted water and cook 400g pasta shapes , following pack instructions.
2. Slice 250g dry-cured smoked streaky bacon and fry in a large pan until golden brown , adding 2 cloves of finely sliced garlic for the last minute or so.
3. Slice 250g courgettes lengthways into quarters and cut into chunks. Add to the frying pan and cook for a couple of minutes with the bacon and garlic until they are slightly softened.
4. Once the pasta is cooked , drain in a colander , then put back in the pan. Add about half a tub of creme fraiche , some freshly ground black pepper and a hanfdful of grated Cheddar. Mix together.
5. Gently fold the bacon and courgette into the pasta and grate the remaining cheese on top,
COURGETTE TEA BREAD
pre-heat oven to 180c/350f/gas 4
grease a 2lb loaf tin and bottom line with greaseproof paper - make it so it comes up the narrow edges so you can use it to lift it out- 1 large egg
- 125ml sunflower oil
- 175g courgettes -trimmed and grated (on large holes)
- 150g wholewheat flour -i used ordinary OR USE SR AND OMIT BAKING POWDER & BICARB
- 1/2tsp baking powder
- 1tsp bicarb
- 1tsp ground cinnamon
- 175g soft dark brown sugar
- 75g sultanas
- 3oz walnuts chopped
- tip courgettes and all dry ingredients into a large bowl and mix well
- whisk egg into the oil and pour into dry goods
- mix to a thick batter and pour in tin
- shove in oven for about 1 hr or until a skewer comes out clean..cool in tin for 10 mins before turning out to cool
when cutting you will need a really sharp knife as its lovely n sticky and This will keep in a tin for 1 week.... or can be frozen.
i made 38 mini muffins and they took about 15 mins a batch and if you let them stand for a few seconds in the tin they firm up and are easier to removeit's nice to be important but more important to be nice!! :kisses3:0
