So do you slice yours in rings or slice then length ways?
I slice it length ways and make a few criss-crosses in the flesh (but not so deep as to go through the skin) and scoop out the seeded bits.
  • I love marrow stuffed - but if you`re short of time or it`s too warm to want to use the oven, have you tried marrow sort-of-ratatouille? I do a quick base of chopped onion/tomato/mushroom/any sweet pepper, in olive oil, get the veg soft and nearly ready first, then throw in some chopped marrow, shake well and slam a heavy lid on for just long enough to get the marrow chunks `al dente`. Yum, really!

It was successful. It was OH's first time eating marrow. I topped it with cheese and grilled the last few mins. It was delicious. Next time I think i will leave off the cheese, not because it wasnt nice but beacause I'm on a diet:)
Loved our trip to the West Coast USA. Death Valley is the place to go!
  • A colleague of mine has been away on holiday and all of his lovely courgettes have grown into marrows. He's been giving them away in work today and I would love to cook one this evening. Does anyone know of a good recipe using marrow?

I love stuffed marrow, filled with savoury mince or chilli con carne and slow baked for a couple of hours.:drool::drool:

I haven't had that for years, since my parents moved out of their old house into one with a smaller garden. :(

I stuff mine with bolognese style mince which I love, but my fella has cold sweats over marrow as he had to eat watery boiled marrow as a child.

I've just made a chocolate & courgette cake (which was yummy) with a 12oz courgette.

I also used a courgette instead of aubergine in a ratatouille then used up the last with a prawn, tomato & courgette meal.

I like courgette frittata - this is quite a good recipe but it is easily varied and I wuld grate the courgettes rather than slicing, especially if they are at the marrow stage!
