Thanks. This looks simple with not too many ingredients

yes its straightforward and simple! I Used some tomatoes that were a bit split or over ripe (home grown) to use them up, its a nice easy recipe.

    Hi dedicatedmoneysaver,

There's an earlier thread with lots of ideas for using marrow so I've added your thread to it to keep the suggestions together.

I would recommend the marrow and ginger jam it is lovely but with a 9 pounder you would get a lifetime's jam or all your xmas gifts sorted!

This recipe is lovely - made it today, second batch this year, as everyone keeps begging jars of it from me - it is very good with cheese, and even alongside curry! Its sort of sweet and spicy :-)

    Marrow Chutney from www.allotment.org.uk
    Preparation Time: 10 minutes
    Cooking Time: 50 minutes
    Serves: 4
    Ingredients
    3lb marrow
    1lb onions
    1lb ripe tomatoes
    1 pint malt vinegar
4 oz dates - I used sultanas instead
    2tsp allspice
2 tsp ground ginger - I used a load of fresh grated instead - about 2 tbspn
    2 tbsp salt
2 tsp freshly ground black pepper
    1 ½ lb brown sugar

    Instructions
    1. Peel the marrow and cut into small chunks. Peel and chop or mince the onions. Peel and slice the tomatoes.

    2. Put all these ingredients in a pan with half the vinegar. Stone and chop the dates and add to the pan. Simmer gently until soft and pulpy and the marrow can easily be crushed. Add spices, pepper and salt and simmer for a further 15 minutes.

    3. Stir in the sugar and remaining vinegar. Continue cooking until thick (No liquid should ooze into the path made by the wooden spoon as it is drawn cross the pan).

    4. Pour into warm jars with plastic or plastic coated metal lids.
I made this last night and while it took longer than 10 minutes to prepare and longer than 50 minutes to cook (about 2 hours in all:o ) it is absolutely gorgeous:T :T :T :T . It tastes very similar to a very popular pickle beginning with "B", but sweeter and not so vinegary tasting (I might put less sugar in next time and I also only put 2 teaspoons of salt in as 2 tablespoons sounded rather a lot!). It must be the combination of spices that makes it taste so similar. Thanks so much FC - will definitely be making again. Thoroughly recommend.

Thankyou Billieboy! yep, I agree on the timings - perhaps we are just slow cooks but I defy anyone to peel and chop three pounds of marrow in ten minutes without taking a finger off, nevermind the rest of the ingredients!:rotfl:

However, I keep making it, cos it does taste great - I use a bit less salt than the 2tbsp advised, probably about three teaspoons full, and I also use fresh grated ginger, quite a lot of, just cos I love it!

  • Please please help.

My Grandad has grown some marrow's on his allotment and to put it midly there is rather a lot of them (approx 20).

What can i do with them all?

We have had stuffed marrow twice in the last two weeks and the family are not keen on having it again.

A friend suggested making Jam but i don't know where to start.

Ideas and recipes would be most welcome.

    Thanks
