    you can make stuffed marrow - cut the marrow in half, scoop out the seeds and place one half on a greased oven dish. Fill the hollow part (ie where the seeds were) with some sort of cooked savoury mince and veg mixture (bolognese sauce, shepherds pie base, even curry if you like, and leftovers ideal as you don't need that much), pop the other half of the marrow on top - you may have to secure it with a skewer or something. Then brush it with oil and bake in the oven till tender. It is actually very nice!

    How do you get marrows from a courgette plant :confused:

    I got a huge marrow in my veg box this week. How much ginger do I need in the jam? I am making 5lb Jam. Ex MIL used to use ginger powder but I do not really want to ask her LOL;)

    onions
    carrots
    celery - optional
    garlic
    marrow
    tin tomatoes
    stock cubeoptional topping
    haricot beans or chick peas - any beans really
    herbs


    Fry together gently in whatever you like onions, carrots and if you have it celery - amount depends on how much you're making. After 10 minutes add garlic to taste and the marrow or courgette in cubes then fry another minute. Add a tin of chopped tomatoes, cooked haricot beans or chick peas and a stock cube. I put in bay leaves and rosemary because I have them in the garden. Simmer for 15 minutes.

    It makes a great base for mash on top, a cobbler or my fave boiled potatoes in slices, brushed with oil and browned in the oven.

    Hi
    Came back from the shops to find a very kind friend has given me the biggest marrow and courgette I've ever seen. Any ideas what to make? They will both keep for a while but once I cut into either of them I've got to make lots of 'something'.
  • Stuffed marrow is nice - stuff it with minced meat, bolognaise (sp) style or you could use tvp if you didn't fancy meat. you can slice it up and roast marrow in oil or frylite, with some seasoning, such as garlic and onions, salt, pepper.

    I love courgettes, I eat them raw in salads, roast them with other vegetables (such as aubagine, tomatoes, red/white onion, garlic, mushrooms, peppers, add them to a stir fry with brocoli, peppers, mushrooms etc add a bit of soy sauce and ginger, have them steamed as a side vegetable, fry them in oil or frylite with garlic, make a fritarta (2 or 3 eggs, onion, courgette, mushrooms - whatever you fancy really - fry the vegetables, add the eggs, allow to set then pop under the grill, nice with salad or cooked veg)
