    OOooh marrow jam, my dd always come home with one from the schools harvest festival and i never know what to do with it.

    I'm sorry but BIN IT ............. its the most vile veg in the world (that or my mothers awful cooking of it). We were made to eat it as kids as dad grew loads. We all hated it and used to be sick as they forced us to eat it.

    Marrow stuffed with butterbeans

    4 tbsp olive oil
    1 onion, chopped
    3 garlic cloves, chopped
    2 tins of chopped tomatoes
    2 tbsp tomato puree
    2 tins of butter beans, drained and rinsed
    50g of ciabatta bread or any other bread (a little dry, not fresh)
    some fresh parsley
    a marrow of approx 1 kg

    Cook onion and 2 cloves garlic in 1 tbsp of olive oil until soft
    Add tomatoes and tomato puree and simmer for 15 minutes until thickened
    Once thick, stir in butter beans and cook for another 2 minutes
    Put the bread, remaining garlic and olive oil, parsley, salt & pepper in a food processor and pulse until it forms rough crumbs. Spread onto a baking sheet and bake in oven (200°) until crisp.
    Peel the marrow, slice into thick slices (about 3 cm). Take the seeds out of the centre of the slices and cook in boiling water for 4 mins until tender. Drain well and arrange them in a serving dish. Fill the holes in the slices with the butterbean/tomato mixture - pile it up nicely.

    You can use this same technique filling the marrow rounds with something like bolognese sauce for a non-veggie stuffed marrow dish.

    Sorry Kazmeister - have to disagree I absolutley love marrow and this is the first year I have grown my own so hopefully will have loads to it.

    Must admit I dont eat it boiled though, I like it par boiled then put in the roasting tin with the roast - soaks up all the meat juices. Also like it stuffed.

    Cant wait for my first one to be ready - next week probably.
  • We often get homegrown marrows from the MIL and this is what i normally do - i make a big batch and freeze portions which works well

    Stuffed Marrow

    Slice marrow into rounds about 3inches thick and scoop out seeds in middle. Roast for about 15 minutes GM6.
    Remove from oven and stuff with sausage meat (make hanburger sized patties and squash into the centre of the marrow.)
    Return to oven until sausagemeat is cooked.

    Meanwhile prepare a tomato sauce from a can of chopped tomatoes, onion and garlic.

    Pour sauce over marrow to serve. Goes very well with mashed potato.

    Like i said it freezes well - i usually prepare and cook the whole marrow this way and then wrap and freeze extra portions.

  • This recipe is lovely - made it today, second batch this year, as everyone keeps begging jars of it from me - it is very good with cheese, and even alongside curry! Its sort of sweet and spicy :-)

    Marrow Chutney from www.allotment.org.uk
    Preparation Time: 10 minutes
    Cooking Time: 50 minutes
    Serves: 4
    Ingredients
    3lb marrow
    1lb onions
    1lb ripe tomatoes
    1 pint malt vinegar
    4 oz dates - I used sultanas instead
    2tsp allspice
    2 tsp ground ginger - I used a load of fresh grated instead - about 2 tbspn
    2 tbsp salt
    2 tsp freshly ground black pepper
    1 ½ lb brown sugar

    Instructions
    1. Peel the marrow and cut into small chunks. Peel and chop or mince the onions. Peel and slice the tomatoes.

    2. Put all these ingredients in a pan with half the vinegar. Stone and chop the dates and add to the pan. Simmer gently until soft and pulpy and the marrow can easily be crushed. Add spices, pepper and salt and simmer for a further 15 minutes.

    3. Stir in the sugar and remaining vinegar. Continue cooking until thick (No liquid should ooze into the path made by the wooden spoon as it is drawn cross the pan).

    4. Pour into warm jars with plastic or plastic coated metal lids.
  • Don't have a recipe but as a child we had marrow jam. It was lovely! Think there was a bit of a mild kick of ginger or something added though.

    My mother makes this - it's wonderful

    chop and gently saute an onion, till soft, not coloured. Chop up marrow into 1inch cubes or thereabouts. Either chop up some tomatoes, or open a tin and drain and chop it a bit. Put onion, marrow and tomatoes, good amount of salt and pepper in an ovenproof dish. Get fresh breadcrumbs and fry in butter for a few minutes (you don't have to, but it's much nicer if you do). Mx breadcrumbs with some grated cheese and some chopped thyme, dried works really well for this recipe if you don't have fresh. Lay this over the top of the veg and bake until golden and lovely.

    Don't have amounts as it is purely to taste - chopped courgettes work just the same.

    Thanks. This looks simple with not too many ingredients, so will give it a go when the greengrocer starts selling them (cheap:rotfl: ) and when I'm wondering what to do with my bumper crop of tomatoes!
