    I have an amazing cookbook ' Lunchbox' by Amanda Grant. How about Frittata, Couscous or pasta salads. All can use up bottom of the fridge veg. Tomorrow my husband is having Avocado yoghurt, lime and red onion sandwiches because the yoghurt and avocado need using up. I've baked a sundried tomato and olive bread to go with it. Just makes sandwiches a bit more interesting.

    I understand your dilemma. I am at home now after a lot of years working and I was very uncertain what to eat for lunch. I am not keen on sandwiches or too much bread which complicates matters. I now have a repetoire of lunches which use up leftovers and are stored in freezer. I have;
    HM quiche - I will make a big one and freeze individual portions. Take it out of the freezer, warm it through and serve with salad
    Veg chilli - again I make a big pan, freeze in individual portions and serve with small pitta breads (from the freezer)
    Frittata - I fry off a couple of mushrooms or tomato or anything else from the bottom of the fridge (left over roast veg are yummy), add a couple of beaten eggs, cook until set, sprinkle over some grated cheese and finish off under the grill.
    Left over HM auliflower cheese (you guessed; from the freezer!)
    HM soup - make a lot and freeze in individual portions. I tend to put some lentils in or something similar to make it more filling. My favourite is bacon, lentil and cabbage.
    Stuffed pepper if I have half a one that needs using up. Bake stuffed with a tomato and a couple of mushrooms and a bit of grated cheese.

    There's some really great ideas here, thanks all.
    I have decided that next week I am going to set myself the challenge of at least three lunches out of seven will be something other than sandwiches!
    And I shall be using the suggestions on here to do this.

    What about salad made from Greek cheese (G.cgeese, tomatoes, cucumber, bit of red pepper, olive oil, herbs)

    Hard boiled eggs

    Tuna salad
  • Pitta pizza's
    Pittas stuffed with:
    scrambled egg and tomato
    chicken goujons and mayo with lettuce and tomatoes
    corned beef and salad wraps
    quesidillas
    bubble and squeak with a fried egg
    frittatas


    Soups
    Blessed are the cracked for they are the ones that let in the light

    Mr LW takes a lunchbox to work, and invariably has two sandwiches made from HM bread, one containing cheese and the other containing HM jam in the middle, a slice of HM cake or a HM biscuit and two pieces of fruit - generally a banana and an apple. Same every day, says he's perfectly happy with this.

    I'm at home (retired and disabled) and my lunch is one slice of toast (HM bread) with cheese on, a slice of HM cake, and if I can manage it, a banana or other piece of fruit, whatever needs using up. I tend to eat while I'm doing something else, so don't really notice what I'm eating, tbh.:o
    If your dog thinks you're the best, don't seek a second opinion.;)

    Omelette?

    Smoked Salmon and cream cheese on rye bread - one of my favourites!

    Although - normally, if at home i would just have a toastie, sandwich, wrap or soup.

    Other options could be quiche or pie or something like that
    Weight loss challenge, lose 15lb in 6 weeks before Christmas.

    Mainly soup, boring I know, but its cheap, healthy and takes no preparation (cos I buy morrisons value tinned) so get a weeks lunches for £1.25. I never could motivate myself to prepare the night before

    On the odd occasion when there is left overs, I take that to work instead
