I took to work tuna mixed with a small can of sweetcorn, 1 tbsp. low fat mayo and a few pickled beetroots. Plus a cuppa soup. It was surprisingly filling and I enjoyed it

I had HM hummus on HM bread with Aldi butter/oil spread and a cuppa tea.
Simple and lovely and very cheap!

I had a bowlful of lettuce, sweetcorn, grilled peppers (from the fridge) and LO salmon, with mayo, crispy onions, chilli flakes and fresh coriander. No pic as I was hungry

This is exactly my kind of lunch! It's filling because it's high in protein ( tuna) and fat (mayo, full-fat is fine) but low in starch (pasta/rice/ bread etc). Two portions of veg there too

I am sick of eating sandwiches day after day! I really need to come up with alternatives which are light, yet easy/quick to prepare. I make soup every now and again when my veg draw is looking a little sad
I don't mind cooking something which could be divided to eat over a number of days.
