I've never used ketchup or tomato puree in meatloaf - i'm allergic to tomatoes.
I use bread soaked in water and then squeezed out (but can use breadcrumbs), mince, finely chopped onion and an egg (or two depending on quantity), S&P to taste. all mixed together and then slopped onto a baking tray until cooked. Its a very scientific method0 -
My Oh hates ketchup, but I can use small amounts in cooked dishes without complaint.

I don't like ketchup either, but it's quite tasty in meatloaf! I mix in some paprika, smoked paprika and honey with it which just makes it taste like a nice bbq tomatoey sauce, rather than a cold sweet gloop.

I had planned to make a meatloaf this evening. However, when I went to the freezer, I discovered that the minced beef has already been used and I only have sausagemeat.
Will a meatloaf work with just sausagemeat or do I really need the minced beef?

Hi LILLIBET, do you have any stuffing mix? if you do mix some in with the sausage meat and have you got any eggs? if so boil up 3 or 4 to hard boiled then use the sausage/stuffing mix to make an elongated scotch egg type roll, that bakes up really nicely and if any is left over, it's nice in rolls or cold with a salad tomorrow. It's something I do often. If you want to zing it up a little add in a chopped apple and some brown sauce to the meat mix before making the roll, nice as well, Cheers Lyn xxx.0

I haven't got any stuffing mix but I do have fresh sage still growing. If I add some onion granules and celery salt to you think that would do the same job?

Yes that should do the job very nicely, chuck in a couple of handfuls of fresh breadcrumbs as well and you've got the same ingredients as stuffing mix, hope it's nice, Lyn xxx.0

Am pleased to report this concoction was a success! Once the fresh sage and the onion/celery salt was in, I added some breadcrumbs, squashed the mixture into an enamel pie tin, topped with sliced mushrooms and tomatoes, a dot of butter, covered with foil and baked slowly for about an hour. I added the juices to a beef stock cube and water and simmered to make a rich gravy.
Also, opened a tin of Value potatoes and roasted with a red onion and some sliced leeks. All in all, a yummy dinner out of the freezer/cupboard at the very, very end of the month when I only have £1.32 to last until Friday. :T:j[DFW Nerd club #1142 Proud to be dealing with my debt:TDMP start date April 2012. Brilliant idea MrsLurcherwalker !I will be pinching this to make a scotch egg roll as soon as I finally unearth the rolls of sausage meat that are lurking at the bottom of the freezer under 6 tonnes of green beans and assorted garden produce :rotfl:
