  • This is a favourite of our family:
    1 Tsp vegetable oil
    1 onion, chopped
    2 sticks celery, chopped
    6oz/175g mushrooms, chopped
    2oz/75g cooked lentils
    4oz/125g sage and onion stuffing mix made up with boiling water
    1 lb/500g mince
    salt and pepper
    1 beaten egg

    Preheat oven to Gas 5/375F/190C
    Heat oil in frying pan and fry the onions, celery and mushrooms until soft.
    Put in a bowl with the precooked lentils, stuffing , mince, seasoning and beaten egg, mix together well. Grease the loaf tin.
    Press down well into a 2lb/1.1Kg loaf tin , cover with foil stand in a tin of hot water and bake in the oven for 1 - 1½hrs
    It is also good cold in sandwiches you can add garlic if you want, I don't because my lot aren't keen

    Thanks Chrissy for bringing this up.

    After seeing your post I looked at the recipes in this thread and realised that I'd never tasted meatloaf before, so as I had all the ingredients in I thought I'd have a go.

    This is what I did.....

    approx 1lb beef mince
    four (thick) pork sausages (skinned)
    one large onion chopped finely
    one half dead chilli I found in the bottom of the fridge (seeds removed and chopped finely)
    a garlic clove crushed
    lots of black pepper
    a sprinkling of mixed herbs
    a decent dollop of ketchup
    a good glug of worcester sauce
    breadcrumbs (about 4-5 slices of bread)

    Put all the ingredients into a bowl. Mix with a spoon until your arm gets sore... then just get in there with your hands.

    Put the mix into a small (greased) loaf tin.

    Add some water to the slow cooker. Cover the loaf tin with foil (as per one of the previous recipes) and carefully set it into the slow cooker. Cook on medium for about 5 hours. Drain off the juices to make a gravy then turn out the meatloaf.

    It's really tasty and means that I don't have to put much thought into dinner for tomorrow night! :j Although teenage ds did ask why there was a 'massive rectangle shaped hamburger' cooling in the kitchen when he got home. :D

    well i finally got around to this tonight.

    in terms of taste i must be onto a winner (OH went back for seconds :D). however it was rather more crumbly than i would have liked, despite using 2 eggs to bind it. any ideas what i'm doing wrong?

    also, any way to stop it looking quite so anemic in the middle? i did test with a skewer to make sure it was cooked through, and of course when its smothered in gravy no one is any the wiser how pink it looks but it is offputting _pale_

    Typed into google and there are so many different ones! has anyone made one that is nice and fairly basic? some have ritz crackers, celery etc in so sound a bit odd from what i have had in the past!!

    Here's two that I've used:-

    Dead Easy Meatloaf
    1lb Minced Beef
    1lb Pork Sausage Meat
    1 packet Paxo Sage & Onion Stuffing
    1 Egg

    Mix all of the above together (I found using my hands the easiest) press into 2lb loaf tin and bake for 2 hours.

    OR:-

    Meatloaf (slimmers special)

    454g lean mince beef
    Handful button mushrooms cut into quarters

    8-10 rashers extra lean bacon
    ½ - 1 tsp mixed Italian herbs
    1-2 cloves garlic, crushed

    1 small onion finely chopped
    1 level tbsp tomato puree (½ syn per level tbsp).
    1 large egg, beaten
    Salt & pepper to taste


    Pre heat oven to 200C/Gas 6
    Dry fry mince, onion, garlic & mushrooms until mince is brown & the onions & mushrooms are soft – drain off any excess liquid.
    Combine all ingredients EXCEPT THE EGG together & mix well, then gradually but thoroughly stir the egg into the meat mixture.
    Spray a loaf tin with fry light and line with the bacon, then firmly press the mince mixture into the lined tin.
    Bake in the oven for 25-30 minutes.

    Serve with vegetables or salad, or save some to have cold for lunch the next day.
    I let my mind wander and it never came back!
