    Your recipe has me licking my lips thriftlady, shall be giving that a try very soon. Also, I love the idea of having it cold the following day, yum yum!

    Does anyone have any suggestions on how I could do meatloaf with some 'cook from frozen' beef mince? Would like to do one tonight, as I've loads of frozen mince to use up (a tesco online substitution gave me mince instead of beef pieces!), and we've eaten all the shepherd's pie and bolognaise we can face for one week!

    I like Jeanetter Orrey one - her recipes are good, or Nigella has bitesized ones one her site which are nice for taking out. Don't know how to post links sorry - will have to learn.

    Gah! No advice anyone?

    Guess I'll have to improvise with a recipe that's already here!

    Edit: To save making a new post - it worked, Husband and I are now very full of meatloaf and colcannon, and the leftovers (what little there is) is chilling in the fridge for me to take to work for tomorrow's lunch. I'll definitely be making meatloaf again!

  • I've been using this one which is based on Nigella Lawson's mini meatloaves from Nigellla Express:) I make it as one large loaf now using a 2 lb bread tin.

    I'm sure there are other recipes on this board. Try the search facility;)

    Use 500g of mince and add one large egg, a couple of tablespoons of tomato puree, one finely chopped onion, perhaps some garlic or herbs and mix together (your children might like to help with this bit). Put it in a meat loaf style dish and pop it in the oven for between 45mins to 1hour on about 175 degrees or until cooked through.
    This one is from the netmums website. Have made it with both beef and turkey mince. Comes out really well. :j
    My husband says it is like a big beefburger. I whizz up peppers, onions etc in the food processor to add to it.
    TIP: use oatmeal if you dont have any breadcrumbs, comes out just as well.

    I use a recipe similar to Mamae's one, but when it comes to the mince, I use 2 parts beef mince and 1 part pork mince.
    The pork mince gives it a richer flavour then just using beef mince on it's own.

    This is the one I use:

    4 oz mushrooms, finely chopped
    small onion, finely chopped
    breadcrumbs (about 2 slices of bread)
    2/3 cup milk
    1 egg
    1 1/4 teaspoon salt
    1/4 teaspoon black pepper
    1/4 teaspoon allspice or nutmeg
    1 pound beef mince
    1 pound pork mince

    Mix bread crumbs, milk, egg, seasonings in bowl. Add mince and mushrooms and onions. Mix thoroughly and put in loaf pan (or whatever you want to cook it in). Bake 1 hour and 15 to 20 minutes (or until meat in center is no longer pink). Let stand 10 minutes.

    We put a gravy on it that is just the bisto gravy, mixed well, with a little bit of creme freche mixed into it.

    It reheats up well too.
