This is the recipe I use.

    1lb Mince beef
    4oz white breadcrumbs
    Pinch of mixed herbs (optional)
    4oz diced raw bacon
    Half a small onion, chopped
    Salt and pepper
    1 egg, beaten to bind

Bind all ingredients together with the beaten egg.
Line and grease a loaf tin and put the mixture in. Cover with tinfoil.
Bake in a bain marie (roasting tin half full of water) for 1hr -1hr 15 minutes. Fan oven 160c.or equivalent. 180c /gas 4 ?
Can be eaten hot or cold, good in sandwiches and salads as well.

My Mum did a variation of this.
She used 6 or 7 Simmers butter biscuits instead of the breadcrumbs and put the mix in a pyrex bowl then steamed it for about an hour. Both versions are delicious and are eaten very quickly in this house.
that sounds a lot like my Grandma's recipe, which I still make myself :)

she used 10 cream crackers & it was steamed in an earthenware meat roll jar so it came out round when it was sliced

I love it, the end result is so much better than the simple ingredients would have you think

I haven't tried meatloaf with stuffing mix but I have used it in meatballs before. If you think about it, it's got herbs and seasonings that you'd probably already use in meatloaf/meatballs, plus it bulks it out and makes it go further! I just mixed minced beef with mix from a packet and a beaten egg and baked in the oven.

    Is it something like this?

I expect you could make your own tomato sauce easily enough if you wanted to avoid buying a jar of sauce

  • I have a Hairy Dieters recipe for meatloaf which has 3 tbsp of tomato ketchup in it. I want to make it but I really don't like ketchup, what can I use instead? I thought maybe tomato puree but 3 tbsp of that seems a bit much?

I made this last night! It was delicious. I'd say use tomato pur!e if you really can't bear the idea of ketchup but you honestly can't taste a 'ketchup' taste in the loaf.
