I shred the cabbage and mix it with a couple of grated apples, a finely chopped large red onion, half a tsp cinnamon, half a tsp of nutmeg, tsp salt, bit of pepper, 2 tbs brown sugar and 3tbs white wine vinegar along with about half a cup of water. I then braise it in a covered casserole dish for about an hour and a half in a 180 oven, stirring occasionally. It freezes beautifully and is lovely with stews and hotpots.Jane

That depends on how long it's been sitting in the supermarket for, though. I always put veg in the fridge. Red cabbage makes very nice coleslaw and sauerkraut.0

Hello everyone,
Can anyone give me any ideas what to do with red cabbage?
It is not a vegetable I would normally buy,but I had some in my organic veg box last week.
I have seen a few recipes for braised cabbage which sound quite nice, but it is usually suggested as an accompaniment to beef stew or some sort of meat and I am vegetarian,so I can't think of what to serve with it.
I suppose I could do veggie sausages with it,unless anyone has a better idea.
By the way, thanks to Gingham Ribbon for her great vegetarian meal planner.I am fairly new to vegetarianism and I have found some great recipes on here.0
