Gently fry (not cremate!) the finely chopped onions first, preferably in a bit of goose fat (get it at Tescos).
Use a really tart apple (like Braeburn). Peel/de-seed the apple and cut into slices.
Add a couple of whole cloves and a dried - or fresh, if you have - bayleaf. Remove those before serving.
Go sparingly on the vinegar - add half a teaspoonful at a time and taste before adding any more
Preferably use fresh red cabbage, really finely shredded. If you have to use it from a glass or tin, wash it in a sieve under running water first. The frozen stuff can also be used, it's better than glass/tin stuff, but nothing beats a fresh red cabbage.
Braise the shredded cabbage on gentle heat for a few minutes, just with the onions, goose fat and spices. Add just a few drops of hot water (half a cup max for a medium sized cabbage) to finish the cooking.
Like a lot of dishes, it tastes a hell of a lot better when warmed up a day later....(but don't cook it into a stewy mess, it should still be a bit 'al dente').
Also freezes really well once cooked, so you can make a whole batch in advance.
Edited: oh - and the final 'cheat': add a cube of Knorr vegetable stock0 -
I've used Delia Smith's for the past 3yrs and found it freezes really well and ace on Christmas Day ... this year I've even ventured to do it in the slow cooker (look what you lot have done to me!!) :snow_laug

thanks for all your replies... now that i have the basic idea i can do a sort of amalgamation of all the recipes (i usually just toss things in and rarely measure anything) her recipe is a bit on the sweet side so that's what i was worried about...
i'm going to use balsamic vinegar instead of redwine as we have some balsamic already but that should add to the nice sweet flavour. i'll let you know how it turns outfounder of Frugal Genius UK (Yahoo Groups)0 -

LIDL'S had some very cheap last time I was there.
I find doing red cabbage in the pressure cooker saves a lot of time.
I used basalmic vinegar last time and thought it better.
I use the Delia recipe for Braised Cabbage and apple as a basis for my version Just make the liquid up to half pint for the pressure cooker(5mins low) but reduce it a bit after the pressure has come down slowly.My weight loss following Doktor Dahlqvist' Dietary Program

Hi, this is my first ever post and cabbage is as good a place to start as any.
An amalgamation of cabbage,onions and apples is definitely the way to go but don't be tempted to leave out the vinegar or your cabbage will turn blue!
You must also try it with sausages - brown them first and add with the other ingredients. Those rings of smoked sausage are good, I expect chopped up frankfurters would be nice too - sorry if you're are veggie. :rudolf:0 -

Oh yes it goes fabulously with kabanos. Not very moneysaving though.Still wish I could buy a TARDIS instead of a house!0
