    Thanks for that, found the recepie on the website, here. I would never have thought of making it into a pudding. May try it tonight.

    this one is from 'yummy', Jane Clark's book of family recipes. We made it last week when our organic box was full of butternut squash and it was indeed yummy.

    Cut the butternut squash in half, scrape out the seeds, splash with olive oil and wrap in tin foil. Bake at 220 for 30 min until soft and golden. Scrape out the flesh and mash it. Meanwhile fry the mushroom sin olive oil till golden. Spread the butternut squash mash on toast and spoon the mushrooms on top. Serve with crunchy salad. Use ground seed butter to fry the mushrooms for a nutritional kick.

    You'll have to buy her book to work out how to make ground seed butter as I don't want to breach her copyright.

    i love butternut squash, i have found that since buying a new veggie peeler it is so much easier to peel. so maybe my peeler was a bit blunt?

    my kids love butternut mashed and mixed with pasta and parmesan cheese. this is a definate hit with my 14mth old ds

    im happy to eat it as a mash its soo yummy.

    do you think its a bit too cold now to prepare for growing yourself??
    It only seems kinky the first time.. :A

    yum ,some fab recipes ! i bought a butternut squash ,half price in aldi today

    ive never tasted it let alone cook with it lol

    think i will roast it :D

    yes too cold to grow now, but put some seeds in pots on your windowsill end of next April, to plant out around the end of May (maybe a bit later if you are up north, we are in sunny (actually, it is peeing down tonight:) Wiltshire. I only had one plant. It got huge - I had not grown them before, though we always have courgettes etc - and we have had loads of squashes. There are still lots on the sitting room window sill (they look pretty as well, or perhaps it is just me). Really easy to grow, just buy a packet of seeds and follow the instructions. They need regular watering though.

    now i know they are both types of gourdes (sp?) and come from the same family, but is there any taste difference between butternut squash and pumpkin, because they smell exactly the same!

    Well, that depends :D The pumpkin I've grown this year taste very similar to butternut squash, but those enormous haloween pumpkins taste of nothing :eek:

    Seriously, I use a nice pumpkin in the same way as butternut squash. We have so many that DH has started eating thin slices raw. He's also put chunks into roasted veg, to give a nice sweet taste.

    BTW, today is Thanksgiving, so we'll be mainly eating pumpkin in the house of Penguin!

  • Cut it into small chunks, throw in some diced bacon, add a chopped red onion and sprinkle on some dried sage. Drizzle with oil and put in the the oven for 35-40 mins. Gorgeous. I'm having it tonight!
