Roast it, peel it, chunk it, thenm simmer in stock with chunks of roasted apple and a vanilla pod. Blitz = great soup. Heat through with some butter beans to make a main meal with bread.

A sprinkle of ground nutmeg really enhances the flavour of butternut.
We Aussies call it a Queensland butternut and in times past, the wife, Flo, of the notorious ex - Prime minister, Jo Bjelke Peterson, would make delicious scones using the squash.
Lady Florence Bjelke-Petersen's Famous Pumpkin Scones

Degree of difficulty: Low
You need:
1 Tblsp butter
1/2 cup sugar
1/4 teaspoon salt
1 egg
1 cup mashed pumpkin (cold)
2 cups Self raising flour
Method:
Beat together butter, sugar and salt with electric mixer.
Add egg, then pumpkin and stir in the flour.
Turn on to floured board and cut.
Place in tray on top shelf of very hot oven 225-250c for 15-20 minutes.0 -
roast the butternut squash (i put them in when im using the oven anyway) fry some onions garlic and ginger then scoop the squash out into a largeish bowl and blitz with a hand blender with a little seasoning to taste, i always add a little chilli powder to give it a bit of kick too;) then freeze into portion sized tubs untill you are ready to use, this tastes delish with crusty bread rollsproper prior planning prevents !!!!!! poor performance!Only when the last tree has died and the last river been poisoned and the last fish been caught will we realise we cannot eat moneyquote from an american indian.0

Has anyone seen the little tiny pumpkins in Sainsbury's? They are about the size of an apple (roughly) - could I use a couple of those to make some soup?

It is also lovely roasted in the oven with a little olive oil/honey and seasoning and just served up as an accompaniement or why not stick it in a root veg/meat stew?
