Hi trinny,
Peppers are lovely stuffed with flavoured rice and baked in the oven or if you have too many to use this weekend, just chop them and freeze them and you can pick out as many as you need to pop into casseroles etc. There's an earlier thread with lots more ideas that should help so I'll add your thread to it to keep the suggestions together.

Hi everyone
I have a bag of 4 green peppers, a butternut squash and half a bag of carrots left over from last weeks shop. Ii'm going to make a butternut squash and carrot soup but can't think of what to make with the peppers. Any ideas??

Chop them up and throw them in the freezer and they will be ready whenever you need them, stir fry, casserole, soup .....0

chop them in half, season them, roast them with garlic, peel the skin off and eat with the garlic on hot toast. drizzle a little balsamic over if you've got it.0

I like them stuffed with rice mixed with chopped chicken, mushrooms and onions or couscous mixed with oven roasted tomatoes, mushrooms, courgettes and garlic.
If you don't want to use them immediately you can just slice them and freeze as they are for using in stews and casseroles.

Brilliant ideas, thanks everyone, my hubby is always moaning at me as we have a LOT of frozen sliced peppers in the freezer, but as you say they are so useful to throw into casseroles etc. Both recipes you've given me look scrummy and the list of recipes is great. Thanks again.:hello:

My hubby loves steak and green peppers. mix it up with soy and maybe some onion and serve it with mash or rice.

Try roasting the peppers then store in a jar of good olive oil. You can then use them in cooking or in salads or as part of an antipasti-type starter. They will keep for a fair while like this, and the oil from the jar can be used in cooking or salad dressings.One life - your life - live it!0
