    If I have extra I sometimes use them sliced into lengths with dips @ along with carrot sticks .Great snack whilst watching t.v. and better for you than a packet of crisps.

    I had the same problem as my fella will eat the red & yellow ones but not the green ones. I chopped em up small and dried them in the dehydrator. I keep them in a jar called 'Green Stuff' and a spoonful gets chucked into a stew or whatever to add a bit more, well, greeness ;o)

    Cardamom - I've never tried egg in a curry but I will next time!

    JackieO - I love pepper and carrot sticks but only if I can dip them in houmous... Never done it with the green tho. I think I might be green-pepper-ist. Oh dear..!

    A dehydrator; put food in, switch on and leave running overnight and it sucks the water out of food. You can dry all sorts of fruit and veg to save a good harvest and also meat ie beef jerky/biltong.

    You could make peppers stuffed with cous cous, that is very cheap to buy.

    Get a recipe off the internet and make salsa?

    Add it to salad?

    Make veggie pasta?
    I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off :o

    SavvyStudent - do try it, it's delicious and so simple and cheap! You can add any left over veg in to it so they don't go to waste. x

    I love to roast green peppers on a tray in the oven with olive oil drizzled on top and sprinkled with herbes de provence. I usually cut them up into big, chunky bits. Because they are roasted, they become sweeter since the heat breaks the sugars down, and they are really flavourful with the olive oil and herbs.

    They also go really, really well if you throw some chopped up mushrooms on there with them, and you can do cherry toms and carrots too. We often have those with cous cous.

    Hi Everyone

    I cant find any recipes for using up too many peppers in rosieben's index - so if its here somewhere, please help me find it

    I have about 10 peppers - green, red and yellow - all needing to be used this weekend

    I remember my OH having pizza once with peperonata on it - which i am sure is made from pureed peppers, but apart from that - the mind is going blank.

    I dont want to throw them away - but apart from chilli i cant think of anything else to do with them

    Fill them with couscous or mince, make them into quiches, houmous, pasta sauce. There are lots of different things you could have them in or make dishes up and freeze them.
