I keep bags of chopped up peppers in the freezer. But halved stuffed peppers are delicious. baked in the oven until the pepper is all soft and tasty and the filling is hot and delish! wonderful starter with just one half and two along with a salad or Corn on the cob make a nice lunch or even supper.
a nice but simple filling is mushrooms chopped up and fried then either mixed with breadcrumbs or cous cous, and some grated cheese. my veg GD loves this and tbh, OH doesn't even notice there is no meat!0 -
I agree, they do freeze very well.
Perfect though for a large chilli con carne or stir fry.
Also lovely as roasted vegetables as accompaniment to a roast, or cold in a salad.0 -

Stuff them! Take the top off, scoop out the seeds and "ribs". Trim the tops and dice. Brown some mince, drain off fat. Add in diced peppers and onions. Stir in some boiled rice and then stuff the mix into the peppers.
Add some tomato sauce or chopped tomatoes to a baking dish. Put the peppers in the dish. Bake for 30 minutes covered and then 10-15 uncovered.
Season whatever way you want.0 -
There were actually 8 in the bag. I've chopped 4 and put in freezer. Other 4 will be roasted with some couscous, olives and mozzarella on tomorrow.

Normally I use peppers for Spanish omelettes + fajitas but if I have any left overs I roast them + just have them with my evening mealsBroke Student :beer:0

Ive merged this with a thread on peppers.
I would chop and freeze in a wee bag rather than just use them for the sake of it. Just throw into any recipe from frozen by the handful
ZipA little nonsense now and then is relished by the wisest men :cool:
