i once bought an entire tray of pepppers for 50p from veg shop, must of been about 20-30 in there.
i use peppers not prob only 1 a week, so i chopped them up and froze them then portion size batches then when i needed some i added them to the recipe. worked fantastic for me.
i used to do that when I was skint - buy onions and peppers on pay day and spend the day chopping and freezing in meal sized 'mounds', freeze and then bung them all in a huge freezer food box - saved me a bomb.If you haven't got it - please don't flaunt it. TIA.0 -

A late night shopping trip resulted in two bags of green peppers for 12p. Now, how could I leave those sitting on the shelf?
Do you think I could roast some in halves (to fill at a later date) and chop and fry others and freeze them all? or would they come out mushy when defrosted?

I would chop some into strips and then use to top pizzas. What about a veggie chilli?
I have a recipe for stuffed peppers with rice and meat
Serves 4
4 medium red or green peppers
225g (8oz) Lean minced beef
1 medium onion, finely chopped
75g (3oz) mushrooms, sliced
225g (8oz) freshly cooked rice (about 100g (4oz) raw)
2 medium tomatoes, skinned and chopped
10ml (2 tsp) Worcestershire sauce
Salt and pepper
65ml (2.5 fl oz) water
25g (1oz) butter
Cut tops off peppers, remove inside seeds and fibres.
Put peppers into a large saucepan of boiling water and simmer for 2 minutes.
Carefully lift out peppers. Stand upside down to drain on absorbent kitchen paper.
Dry fry beef in a non-stick pan until browned. Add onion and mushrooms and cook for 3 mins.
Stir in rice, tomatoes and Worcestershire sauce. Season to taste.
Stand peppers in a shallow ovenproof dish. Fill with meat and rice mixture.
Pour water into dish. Put a knob of butter on top of each pepper.
Bake at 180ºC (350ºF) Mark 4 or 20 minutes.
I also have a recipe for a mixed pepper flan if you want that recipe just let me know.

I chop and freeze them raw often and they are fine to use in meals like spag bol, chillis, pizza etc

I often freeze them too, particularly as we grow them. I do them in individual little pots (like the sort you buy hummous & cottage cheese in) as they do freeze in a bit of a clump & it just seems to work for me to take a meal's worth out at a time. I freeze strips of peppers to use in chillies & stir-fries and in small dice to use on home-made pizzas.2025's challenges: 1) To fill our 10 Savings Pots to their healthiest level ever
