I have 4 green peppers (cheaper to buy a mixed value bag than individual).
None of the family particularly like them in salads as they are just too bitter.
I did put one in a chicken casserole but again we all picked them out!
So what do i do with them? We're on a healthy eating kick after the festivities so cheese is out!

How about roasting them to lose the bitter taste? You could then use in salads, casseroles, etc. but you may prefer the flavour. Roast with only a small amount of olive oil to keep the health kick

You may well find if you keep persevering your tastebuds will adjust, I never used to like even the smell of raw peppers being chopped, but slowly started eating them cooked with small quantities in fajitas etc. and now I quite like the flavour of them. Ditto with other strong flavoured stuff - e.g. garlic bread, I just used to try maybe half a slice from a baguette, then a whole slice with the next meal, etc. and now I could easily polish off a baguette by myself!0 -
I have this problem all the time and the number I end up throwing away is quite ridiculous.
I have discovered the best value for me - where a bumper bag excluding greens is not available - is actually just to buy the colours you will use individually and then there is no waste. The individual peppers tend to be bigger too, so you need fewer of them.
However, chinese style sauces like satay, black bean or sweet and sour do benefit from green peppers. The sweetness of the sauce balances well with the bitterness of the peppers. Fajitas are another good option.0 -
I quite like stuffed peppers. It makes the green variety much tastier!
If you cook up some rice and other veg with mixed spices, and then pop them in the oven resting in an inch of water they cook really well.
This is one idea but I generally change what I do each time.

I use green peppers in thai green curry done in the slow cooker and they are lovely. I too buy the other colours separately otherwise as not keen on the greens usually.0

I quite often roast peppers, tomatoes and garlic and then make soup.
Again roast with onions and use with chicken etc for fajhitas(?) - roasting in oven with olive oil seems to sweeten the peppers0 -
Thanks everyone. Think I may try roasting them. I used to make a HM veg lasgane but my OH likes a bit of meat in his lasgane.

Either chop them really small so they can not be picked out or grate them into say a chili / curry ... You get the flavour & nutrients without seeing green chunks.Goal - We want to be mortgages free :j
