    If I have a glut of peppers, I just slice them up and bung them in the freezer. They come out fine.

    Not sure if that helps as you are moving, but hopefully it does

    Stuffed peppers?

    I always add one, finely sliced to bags of salad, just gives a nice extra crunch and taste.

  • Chickpeas would be fine in a chilli, no problem.

    Ah, forgot about fajitas and stir fry, mmmm! Feeling inspired now!!

    I whizz peppers up in the food processor to add to chillis, curries, bologneses & stews etc. I do one green, one yellow & one orange usually. We don't like the taste but you honestly can't tell once it's all in ;) The kids don't know they eat them either :rotfl: My Mum used to do stuffed green peppers when I was at home with a mince & rice mixture in them - not had it for years I might have to give them a whirl this week :D

    I was reading a post on Weezl's thread from Confuzzled - she puts the green peppers on the windowsill to ripen and they become red ones!

  • I chop mine into large chunks and put them in the oven with red onions, aubergines, courgettes and sweet potatoes with a clove of garlic and a drizzle of olive oil and roast them.
    They are also nice raw with cheese in a sarnie x

    Butterfly brain - roasted with all that other veg sounds lovely too but it'll have to wait until I have more interesting veg in after we move!

    Ok so I've settled with chilli - I think it's going to be one of those 'use things up' meals, so into the slow cooker will be going:

    250g lean mince (browned and then rinsed with a kettle of boiling water to remove any extra fat)
    5!! Chopped up green peppers
    1 and a half chopped onions
    2 cloves crushed garlic
    Half box of dubious looking mushrooms
    Can chickpeas
    Small can sweetcorn
    2 x cans value tomatoes + a squidge of tomato puree
    Good shake of dried crushed chillis
    Beef oxo cube, black pepper, herbs
    + Might add a can of value baked beans for good measure.

    Will let you know how it turns out! It seems we might be eating chilli for some time to come but hopefully it'll be relatively healthy :D

    we either chuck them in spag bol

    leave on sunny windowsill till the start to turn red

    stuff them with left over bolgnese mix and roast for 20-30mins

    slice them, slice an onion and some tomatoes coat in olive oil, sprinle paprika and roast for 45mins in hot oven.
