    I've just looked in the fridge and I've got one of each of red,yellow and green peppers. I'd say I need to do something with them by tomorrow.
    Can I slice them and freeze them? If so what will I use them in after freezing them? I'm guessing they'd be no good in a salad.

    Any suggestions?

    Add them to pasta or rice with chicken, peas, mushrooms and any other leftovers
    Make a spag bol & add peppers, then freeze.
    Or add to chilli con carne?
    Or, halve the pepper, grill then stuff with cous cous as a scrummy different lunch?

    P.s Save the seeds and plant them!

    If you're going to freeze them, I would chop them up and cook them a little bit - either blanche them (boil briefly then drain), or soften them in a little olive oil.

    Then after freezing you'll have to use them in a casserole,curry or something. When they are defrosted they will be soft. You're right, they wouldn't stay crispy enough for a salad or stir fry really.

    Or have them tonight!

    i've been buying the peppers in tesco's whilst they've been on offer, and i just chop them up, put them on the chopping board spread out, and open freeze them. then i just pop them in a freezer bag, and if i'm making stir-frys or casseroles, i just chuck a few in and cook from frozen

    i've never blanched them, and i've never had any problems with them. i do this with onions and mushrooms as well :D

    i often freeze peppers if i have too many. i chop some up into little squares and some into strips. i just freeze in a bag or tub. They do go soft if u defrost them first . but i add them straifght to the meal forzen. have never had any prob's.

    ....even easier you can just freeze the whole pepper, and chop it later when you want to use it. I'll often buy a pan of 6 or 7 red peppers on the market for £1, and use them until they start looking a bit wrinkled when I'll pop them in the freezer till I next want to cook a ratatouille, casserole of whatever. They're easy to chop up from frozen - just run them under the cold tap for a few seconds and they'll be OK to cut but not too soft.

    I like stuffing peppers - cut them in half and scoop out the innards, bung them in the oven for a few mins whilst you prepare the filling. I quite like tuna mayo filling but but whatever you want in them. Put the filling back in the pepper shells and cook until bubbling. :)
  • Cut them into peices and add some chunks of onion, sprinkle with olive oil and any herbs you have and then season, bake in the oven and serve as a side veg dish with grilled chicken/fish and some couscous - or mix with some cooked pasta and either eat hot with some grated cheese/parmesan or have cold for lunch - lovely and very cheap!!

    Roasted vegetables including peppers are also great as a low fat topping for jacket potatoes or salads.
