peppers recipes and questions

Hi..
Have got too many peppers in the fridge and thought that some wonderful peeps out there might have some new ideas for them.
I normally just chop and add to salads or casseroles but have never roasted them. I have seen somewhere that they can be popped into an oven and then put into a plastic bag but not sure what info came between that happening and then what was done with them
Any suggestions/ help would be most appreciated. I have only recently discovered MSE and am amazed at the savings I have made already. I have even dug out my slow cooker and started to use it :T much to my hubbys delight.
I even managed to buy a SWan Liquidiser/blender for 99p after using a discount quode recommended on one of the other forums :j

Stuff 'em!!
great with rice, chili, curry, tuna, mixed veg etc. Put cooked filling into de-seeded centre , top with cheese or sauce if required & pop into oven until hot through.

If you have some clean empty jam jars you could chop and deseed peppera then put in a jar with a couple of cloves of garlic and a handful of whatever herbs you have to hand. Cover with good quality olive oil. They will keep for ages then. I then use these jars to marinade chicken breasts. If you marinade in an oven proof dish simple transfer to the oven and cook for 20 mins. Kids love the chicken as its sweet and tasty so a good family meal.

If you can't run to olive oil use a mild flavoured oil like sunflower.
I've also heard that for this kind of thing you can make your own fake olive oil by using a mild oil to cover olives for about 4 weeks (to allow the olive flavour to develop) and then it can be used like above. Don't know if this works yet - still waiting for my first batch to mature.0 -

This sounds lovely Poppy! Do you use the peppers in your meals after (as in cooked) or just drop on top of a salad?

Yes if I am cooking the chicken I cook the peppers with it. Kids won't eat the shrivelled up peppers only the chicken. That suits me as they are delicious. If I have some tomatoes lying around I add these too.
Uncooked I use it in salads or with fresh pasta tossed in pesto. For lunch tomorrow (I work on a weds) I have made myself a cheese bagette with the peppers for a bit more omph.
You can buy it ready made on the deli counter in tesco. Its self service and about £1.60 for a small tub. Even though olive oil is expensive (cheapest is Aldi £1.20 for a largish bottle) you can make twice as much as tesco for the same money. Also you can tailor the garlic and herbs to your taste.~Laugh and the world laughs with you, weep and you weep alone.~:)

Loopy i made a Tomato and roaseted red pepper soup at the weekend.
It is a simple as putting then in a hot oven and leaving them there while you do everything else.
As soon as the skin has started to go a bit shrivelled take them out and put them into a plastic bag and seal.
Take them out one at a time and the skin should just peel away and then chuck the pepper into you soup mix and blitz !
Plus everyone thought i was very posh making home made soup when all i done was shoved it all in a saucepan and whizzed it !!!0 -
Bought 15 red peppers in the market for £1. I do like them, but what'll I'll do with so many????
